Cheesy Rosemary Potatoes

These potatoes were delicious and really easy to make. For such a small amount of lemon peel, you can really taste the flavor. If you don't like lemon, definitely cut the amount because a little bit goes a long way. I'll definitely make this again.

Corned Beef and Cabbage I

I don't even like corned beef and cabbage and this was a hit! For the most part, I stuck to the recipe. Just added one bottle of Harp beer, a Tbs. of minced garlic and a dash of celery salt. I did not include the potatoes with the meat because we were having another potato sidedish, but I think they would've been good cooked in the pot. I cooked a 3 1/4lb. piece of meat for about four hours and it shredded beautifully. Great recipe!

Ground Beef Enchiladas

This recipe was easy to make and delicious! Like others, I added chiles instead of jalapenos. I added a little cholula and cumin to the cheese mixture on top of the enchiladas, just for an extra kick. Next time I'll use low-fat cream of chicken and yogurt to spare some calories. The flavoring is so good, I don't think we'll even notice the difference. Great recipe!

Spaghetti Squash I

I had high hopes for this recipe but apparently did something wrong. I don't think I cooked the squash long enough because it had a crunchy consistency. Tasted more like carrots than noodles. Also, I used canned tomatoes which watered down the dish. I'll definitely try this again but will microwave the squash and use fresh tomatoes. Don't make my mistakes!

Tomato Chicken Parmesan

My husband told me that this was better than Olive Garden! This is the second time I made this recipe and it was much better than the first time. I did pound the chicken a little so it'd cook more evenly. Also, I marinated the chicken in a little oil and McCormick's garlic and herb seasoning. This gave the chicken added flavor (the first time it just tasted like bland chicken). It was so easy to make this and we'll definitely make it again!

Spicy Steamed Shrimp

Steamed shrimp with Old Bay is a Maryland-must! You don't necessarily need 3oz. of Old Bay, but sprinkle to evenly coat the shrimp. Add about half a beer (the more aromatic, the better) to the water for a great flavor.

Hot Artichoke and Spinach Dip II

This recipe was a hit! I recently took it to a party and came home with no leftovers. I added about 1/2 cup of red onions which gave the dip a little kick. I almost forgot to add the basil and I think it would've been ok without it, so I only added a couple of dashes. I served with pita chips (another great allrecipes dish). I will definitely make this again!

Acapulco Chicken

This was a very quick and easy meal to make. I don't care for green peppers, so I substituted red peppers instead. We served it with Uncle Ben's Mexican rice and it was a great meal!

Pasta Strega Nonna

This recipe was good and easy to make. We didn't have asparagus so I used frozen broccoli instead. My husband doesn't really veggies but he liked this dish because the hot sauce muted the veggie flavor. Any easy weeknight meal that I'll definitely make again!

Crab Dip

I made this dip for Christmas dinner and my family enjoyed it so much, I had to make it again the next day for the Redskins' game! Like others, I made some changes adding Old Bay seasoning (2 Tbs), celery (1/4 cup), shredded cheddar (1 1/2 cups) and fresh garlic. Yum, yum, yum!

Darn Good Chili

This is an easy recipe for great chili. I put all the ingredients in a crockpot and just let it cook for 5 hours and my family loved it! I didn't think it was too hot or spicy, but was actually missing that extra kick. I'd make it again!

Angel Hair Pasta with Shrimp and Basil

This recipe was ok. I cut the amount of spices in half and the flavor was still overwhelming. After I ate, my plate was still covered in remaining spices. I'd make it again though.

Spaghetti Salad I

This salad was great! I used Good Seasons Italian dressing and rotini noodles, omitted poppy seeds (couldn't find them in the the grocery store) and added black olives. I served it at a baby shower and nearly ate the whole bowl myself.
