This is a fantasic hearty soup!! It sort of reminded me of a minestrone soup. I doubled the recipe to make sure I had enough for a family get-together. Made a few changes...I used fresh made hot italian sausage, in lieu of all beef broth I used 1/3 beef broth, 1/3 my homemade saltfree chicken stock, and 1/3 my homemade saltfree tomato juice (obviously I watch the salt intake!), omitted the zuchinni, added 1 c. pipette pasta, added 1 can pinto beans & 1 can of red beans (rinsed both before adding). Don't be afraid to add more water, broth, or tomato juice because the pasta definitely uses it up. I think the next time I make this I will add some chopped swiss chard or some of those flat italian green beans cut in 1" pieces. I served it with a crusty italian bread. This soup was definitely a hit! Easy to make and easy to tweek!
