Spicy Garlic Lime Chicken
We really liked this! Easy to fix. I pretty much followed the recipe except used up 3 chicken breasts I had (sliced them in to small pieces before cooking in olive oil (no butter used). Also sliced up a portabello mushroom to add in to mix. Seemed like I needed more liquid so I added about a cup of low-sodium V8 juice. Next time I'd probably add some chicken stock too. Covered this and simmered for about 45 minutes. When done, I added 1-2 Tbsp of sour cream. Served over brown rice. Spicy, tasty, and easy!!!
