Artichoke Chicken

Easy and delicious! Made both chicken and veggie-chicken versions. Replaced half the mayo with sour cream as other reviewers advised, not sure if it was necessary. I'm not a very experienced cook so I love how easy this was.

Cheesy Vegetable Lasagna

I skipped the whole milk and flour thing and just used 2 jars of store bought alfredo sauce and added the frozen spinach and parmeson to it. I also spiced up the veggies a bit with italian spices and salt and pepper, and basically covered the whole thing with parmeson and mozzarella that browned really nicely on top. Overall it turned out well but we didn't really feel the ricotta was that great, maybe I used the wrong kind, it was chewy and tasteless. But the other flavours made up for it, I'll just look to see what different types of ricotta there are next time, or maybe add salt to it, or just use more cottage cheese.

African Peanut Soup

Fantastic, but changes made: Added corn, carrots, cinnamon, nutmeg, chili flakes, extra garlic, salt and pepper and double the rice. Let simmer for about 2 hours, added rice about 45 minutes before done. It thickened up, to more of a chili, and was sooo delicious! Added sour cream and a fresh squeeze of lemon juice at the table, really added a whole new kick to it.

Apple-Stuffed Acorn Squash

I made this for Thanksgiving (we celebrate it in October in Canada!) and everyone really liked it! The only change I made was dried cranberries instead of raisins. The cinnamon and apple combination was yummy. It also reheats well if there are left overs, we made WAY too much food so I had a few halves left. I just threw some extra cheese on top and broiled it for a few minutes to brown the cheese and it was still delicious a few days after the dinner. My boyfriend even took it too work and ate it cold for lunch the next day and said it was still really good.

Candied Chicken Breasts

Very good, unique recipe. A little too sweet for me tho, next time I will use less sugar. I made a vegetarian version for myself using soy chicken and a real chicken one for my boyfriend and both turned out well. I baked the meat one for 30 minutes and the veggie one for 15 minutes and both turned out perfect with crunchy breading, I think an hour would be much too long.

Chicken Zucchini Casserole

Delicious! I made a veggie and a meat version because I'm a vegetarian and my boyfriend isn't. Very unique, I loved the crunchy stuffing combined with the creaminess from the soup. I added red and yellow bell peppers. For the veggie I used store bought chicken substitute and cream of broccoli condensed soup. I sauteed the veggies and real chicken first to make sure they were well cooked. I topped each with cheddar cheese and broiled it to a crispy brown. I thought I would have left overs for lunches but both versions were gobbled down in one night because they were so good!

Fettuccine with Sweet Pepper-Cayenne Sauce

I substituted vegtable broth for chicken broth and added store bought grilled vegetarian "chicken" cut up into cubes into my portion, and actual grilled chicken to my boyfriends portion, and we both really enjoyed it. Really flavourful, I can't stand bland dishes so this was fantastic. I used less spice originally, then added a bit more to my portion when I separated it into 2 pans with the different types of chicken, because I like more spice than my bf.
