This is an excellent cake! However, after the hour at 275F it was still jiggly in the middle, so I raised it to 325 for about 15 minutes and then it was done. I wasn't going to put it in the freezer, but after 10 minutes on the counter I decided to try it, so did the 45 min in the freezer. I also did half whole wheat flour and no lemon juice because we have a citrus allergy in my family. Don't know if all that made any difference, but it is DELICIOUS!! It is light and fluffy and rose all the way to the top of the pan! I think it would be great with nuts, but then my kids would never eat it and I'd be stuck with all 60,000 calories! The frosting is very thick, so you could make less if you want it less decadent. But my family loves it!
