Used a chuck roast (less expensive than beef stew) and 32 oz. carton beef stock. I prefer fesh veggies, so I cut up a sweet potato, rutabaga, frozen corn, green beans. Very colorful. Also used Italian seasoned ( basil & garlic)canned tomatoes. Put everything inot the crock pot. roast fell apart.

Caribbean-Spiced Roast Chicken

Reviewed: Feb. 17, 2009
We try new recipes, from this site, weekly and this was such a let down. So spicey made my nose run, the spices were not a good combination & the cinnamon was overpowering.

Vegetarian Sweet and Sour Meatballs

Reviewed: Dec. 31, 2008
This even fooled my husband!! He's a meat & potato guy & my daughter is a vegetarian. He thought I used ground chicken or turkey. Served with stroganoff sauce (no one is a sweet & sour sauce fan). I baked on a greased cookie sheet for about 8-10 min, turning half way through. Suggest adding bread crumbs a little at a time, just enough so you can roll into balls. Plan on making patties for a burger and in spaghetti sauce. Nice change from Tofu & beef.

Slow Cooker Chicken and Dumplings

Reviewed: Oct. 31, 2007
Very tasty. added frozen peas and carrots. Seasoned with poultry seasoning, parsley & garlic powder. When we get home from work we're ready for dinner so instead of waiting 30. min for the biscut dough to cook I made my own dumplings; 1C flour, 1 egg, 1t salt, enough milk to make the dough from into a ball. Drop by Tablespoons into boiling water. Thye float to the top when done. 2-3 min.

Ramen Coleslaw

Reviewed: Feb. 20, 2006
This stuff is addicting.I have some short cuts to share. I used 16oz.bag Dole Classic Cole Slaw. Toast the alomnds & sesame seeds in a saute pan (why heat the oven) Just put them both in the pan crank the heat to high and constantly stir. Has soon as they start to brown turn the heat off and coninut stiring until golden brown. 3 min tops. As for the dressing use rice wine vinegar and added 2T soy sauce. Since I used all 16oz. I needed a little more dressing. Instead of making more I used Good Seasons Asian Sesame with Ginger bottled dressing.

Kerry's Beany Salad

Reviewed: Jun. 15, 2005
What a great combination. I use garbonzo beans instead of barley and left out the kidney beans, b/c I didn't have any. I followed others and 1/2c red wine vinegar and 1/4c olive oil. What a wonderful change from the typical summer potato and macaroni salads.

Peanut Butter Sheet Cake

Reviewed: Feb. 16, 2005
A peanut butter lovers delight. With all the suger and marshmallow I thought it would be to sweet, it's not. I did exchange regular milk for the evaporated in the frosting. Didn't know what I would do with a partially opened can. Next time I will drizzle with chocolate fudge.

Cinnamon Chip Applesauce Coffeecake

Reviewed: Nov. 16, 2004
This got my husband to eat breakfast. As others suggested I used chunky applesauce and added cinnamon & a dash of nutmeg to the batter. Next time I will cut back, slightly on the cinnamon chips. Tried without a topping, to bland. I glazed with powdered sugar, milk & vanilla. Next time I will try the streusel.

Braised Balsamic Chicken

My husband made this one. He made spaghetti noodles and served the chicken on top. He added red pepper flakes and only 1/4C balsamic vinegar. Nothing left over, maybe he should cook more often!!!!!

Green Grape Salad

Reviewed: Oct. 27, 2004
This was a big hit a pot luck. I only used 1 lb of red seedless graps and added 1 can drained fruit cocktail and sliced bananas. Put the chopped nuts in a bolw on the side as an option. I've made the cream cheese, sour cream & brown sugar as a dip for strawberries. Enjoy.
