Caramels

Fear caramels no more!! I love making candy, but quite honestly, have always feared making caramels a bit. No more!! This was very easy to follow. And delicious!! They are perfect. And very easy to adjust for how hard you like your caramel. I like mine relatively soft, so I take it off the heat the moment it hits around 248, and it's perfect. Soft, but still has some resistance and holds its shape. I now will make these every year at Christmas for all of those "extra" gifts..coworkers-teachers-neighbors-etc.

Almond Strawberry Chia Seed Pudding

Perfect! Very easy. Would not change a thing. Although, an alternative preparation I have done is to use 1 c almond milk, and 1 c vanilla Greek yogurt. Great either way. My daughter loves this, too. She will even choose this over ice cream!! Also, after preparing this, I like to divide it into pint size jars to sit overnight. Perfect for grabbing quickly in the morning on my way out the door. May have to stir a bit when you open and eat.

Chia Seed Pudding

I like this recipe. It is great basic starter chia pudding. Very easy to do. I do a couple of things differently, though. I use honey instead of maple syrup in the initial mix with the chia pudding. I also do not mix additional maple syrup/honey with the strawberries before serving. I simply prefer mine less sweet. And if the berries are good, I feel they are flavorful enough on their own. Also I ONLY use greek yogurt when I make this. I just feel the density of greek yogurt holds up better with the chia seeds. And lastly, after the initial 30 minute soak, i gently mix the ingredients to redistribute. I then divide it into pint size jars to sit overnight. These are perfect size for me to easily grab in the morning and head out the door. FYI, I also like this without any additional fruit, etc. On it's own is good, too. Chicken Enchiladas II

Great EASY recipe. Always looking for ideas for work-night recipes. Something that can be thrown together quickly or ahead of time. I make this recipe whenever a friend or neighbor needs a little help. I have gotten rave reviews every time. My only tip is TRIPLE up on the cheese; DOUBLE up on everything else. This recipe (as it's listed above) makes a relatively small amount, at least for my family. I also do 1/2 SHARP cheddar, 1/2 white cheese (Montery, Queso Blanco, Farmers, etc). Enjoy!!

Apple Pie Bars

Love this recipe. Super easy. And turn out every time. It is exactly like my mom made growing up. It is the taste of autumn to me. My daughter and I make a pan each weekend until our apples are used up. I do not use the cornflakes and it seems to turn out just fine without. Not sure of their purpose. I also bake the bottom crust for about 5 min before layering the apples on top. Seems to make it slightly crisper/firmer and seems like it prevents it from getting soggy a little longer.

Classic Holiday Egg Nog

This was very good and simple. My family loves egg nog, but I have always been a bit scared to make it. It definately needed a bit of nutmeg to get the traditional taste, but was a very good starter. I made two seperate batches one for the kids, and one with a bit of "cheer" for the adults!

Crustless Cranberry Pie

This is one of the best "on hand" recipes I have ever come across. So easy to throw together. I have also used rhubarb instead of the cranberries, which is eqully delicious!!

Baking Powder Biscuits I

This recipe was great. I am a Girl Scout leader for a troop of 2nd graders. They have been working on earning their cooking badge. I searched and searched for an easy biscuit recipe that I could use instead of pizza dough for them to make their own individual pizzas. This worked great!! The kids loved it and they tasted great!! Very easy for them to pat into pizza shape and add toppings!
