Black Bean and Rice Burritos

I really wanted to love this recipe, with its wonderful mix of spices, but I felt like it was missing something....especially salt. I ended up having to doctor it up with salt and jarred salsa at the end. I'm not one of those people who puts a load of salt on everything, and I'm surprised I didn't see this in other's reviews. I actually thought I did something wrong so I kept looking back at the recipe, but the only thing I changed was using chipotle chili powder and brown rice. Even after the doctoring it's still just OK. I won't make it again.

Meatball Nirvana

I always use this recipe now for spaghetti and meatballs. I have always added an egg to it, just to make sure there's no chance they are going to fall apart. Delicious, especially with the hot sauce kick!

Arkansas Green Beans

These have become a go-to recipe for Holiday meals for me. I gave my cousin this recipe for this past thanksgiving since she was cooking this year, and everyone was raving about it and asking for the recipe. The first time I made it, I made the mistake of using fresh beans but forgot to adjust the time, and we ended up with undercooked beans at dinner. I definitely recommend using canned beans, I think they have been the best for this. Also, I recommend tearing the bacon up into bite-size pieces before putting on the beans. The whole pieces I used the first time were hard to eat. Also, I tend to prefer savory foods, but I don't find the sweetness of this recipe overpowering at all, it is perfect as is!!

Boudreaux's Zydeco Stomp Gumbo

This is one of about 3 recipes that I will actually make over and over again! The first time I made it, we had a first-time dinner guest, and he actually asked to take some home with him!!! I follow ingredients to the letter, however, after the meat browning and making the roux, I dump everything in the crockpot on high for about 4 hours (I add the shrimp in the last 20 minutes). It is perfect. It is very, VERY spicy though due to the temp of the cajun seasoning I used. Everyone eating loves spicy food so it was just perfect for us. This really is a five star recipe and I highly recommend it!

Chocolate Cherry Cheesecake

I made this last year for Christmas, and it was the first cheesecake I've ever made. It definitely took some time with the different chocolate drizzles, but it ended up looking great and tasting amazing! I only fed 3 close family members, but I'm sure this would be a great recipe to really make an impression at a party or dinner.

Make-Ahead Turkey Gravy

This gravy was absolutely amazing! This was my first Thanksgiving cooking dinner for my fiance's family so I was a bit nervous to wait until the last 5 minutes to make gravy. At least this way I could taste it and make sure it would be a hit, and it was. I was a bit concerned when I went to heat it up and it looked like a big blob of nasty, but it thinned out to perfection after a few minutes. I would recommend like other reviewers to stick with the portion of the recipe as-is, I think the servings are very small as listed. I was feeding 5 people, made the recipe for 10 servings, and ended up with about a cup of gravy. Ended up having to go back and make another batch, but even after that hassle I know I will be going back to this recipe in the future!

Becky's Easy Cilantro Lime Rice

Made this last night with enchiladas for out-of-town family, this was delicious!!! I think I overcooked the rice a bit but it was still delicious. Very easy and fresh tasting. Found that the cilantro wasn't overbearing at all as it can be in some foods.

Peach Shortcake

while the peach and cream mixes were delicious, I wasnt a big fan of the shortcake. Followed the directions exactly, but I found it to be too salty and had a very strong flour taste if that makes sense(yes, I know thats a sillly thing to say about something that is made of mostly flour). I might make the peach and cream mixes again with a different cake.

Quick Zesty Green Beans

These are awesome and super quick. I have made them with canned green beans and fresh....fresh is always better of course but they both turned out delicious. Unfortunately, my boyfriend says they "still taste like green beans" and made a yuck face so I don't think they are gonna curb a green bean haters dislike. That certainly just means more for me! Also, I used regular old bay and I don't see how they could get any better with anything else.

Angela's Awesome Enchiladas

this is THE favorite in our house!! It is a bit time consuming with the chicken shredding and such, but the flavor payout is well worth it. This is always my fallback meal when I'm having company as well. Follow the recipe exactly as written, except I don't put on the black olives until after its cooked. My fiance hates them so I just sprinkle them over my portion. Going to make them again tonight for out-of-town family!!!!

Home Style Macaroni and Cheese

Thought this was good, realized after purchasing ingredients that I wanted to make a bigger recipe, so ended up using about a half cup less of cheddar since I didn't buy enough, and adding about 4 slices of American cheese to make up a bit of the difference. Also used Panko breadcrumbs instead for topping....just really like the airy crispiness of those. It ended up being a very rich but delicious meal!
