Authentic and Easy Shrimp Curry

I just made this recipe for the second time tonight, and it was even better than the first. The only difference this time was I used coconut oil to brown the onions, and I used 2 tomatoes instead of one. My husband and I enjoyed eating this on roti prata bread!

Miso Salmon

Wow! My husband who doesn't usually care much for salmon, raved about this dish last night! I'll be making more of this. I used two small salmon steaks, halved the sauce recipe, and marinated the steaks. Then I stuck them whole pan - steaks and sauce, into the oven for about 25 minutes. Didn't try broiling, but the tender steaks simmered in the sauce beautifully and they were so tender and delicious! Will be making this again!

Chicken Enchiladas II

Red Lentil Curry

Crab Bisque

I've only had crab bisque a couple times before and it soon became a favorite of mine, so I was excited when I came across this easy recipe. But after trying it, I've concluded that I will never make this again. It's ruined, in my opinion, by condensed tomato soup, which overpowers the flavor of the whole soup. I tried adding a bit of cayanne pepper and cheese, but could not cover the tomato soup flavor. Next time I will find a more complex, time consuming recipe, because hopefully making everything from scratch will enhance the flavor. I also can't stand imitation crab meat, but the real stuff is expensive, and totally not worth the cost for this cheap taste.

Slow Cooker Macaroni and Cheese with Broccoli

I used a variety of pasta, as I was cleaning out my pantry. It turned to mush in 3 hours on low, and did not look appetizing, although it was edible. I've tried a couple different mac and cheese slow cooker recipes, and I've come to the conclusion that this type of food simply isn't meant for slow cookers. From now on I'll be using stove top.

Cheesecake Pops

The finished product was delicious, but it was a time consuming mess. I baked the cheesecake according to instruction, and baked until the edge was beautifully golden, then cooled in fridge. But the majority of the top and sides of the cake were too stiff to be molded into a ball. Perhaps the cake should be slightly under-baked? I used two different kinds of chocolate to dip, and the Wilton melts worked fabulously. The other Almond bar would not melt into a thin consistency. When I went in to dip the balls, the stick often came off the ball due to the heavy nature of the chocolate. I did take someone's suggestion and decorate with sprinkles immediately after dipping, as they do dry very quickly. One mistake I made was to put them in the freezer overnight, and by the time I took them out, several had cracks in the outer layer of chocolate, and they immediately began to sweat, and the cute napkins I used as decoration underneath the display became wet while the candy coating almost became soggy. Despite these imperfections, I still had many great comments from the people at the baby shower, and they said they were delicious. First time was lots of work, perhaps next time won't be nearly as hard. I just wish the popsickle sticks wouldn't pull out so easily. Perhaps I should freeze them longer before coating in chocolate.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

My husband gave me a high-five after his first bite, followed by a hand shake! It's the first meal I've made that he would give a total "5-star" rating to, and I didn't even use any balsamic vinegar! I'd have to give it a 5 as well. We're definitely making this meal again!

I didn't care for the flavor of this chili. It tasted too bland for my preference. I added a bit more salt, which helped some.
