I haven't cooked since my son went back to school last Sunday. I have just been really busy.
So, today I took all my leftovers out of the fridge and had them for lunch. I had 2 stuffed portobello mushrooms, a chicken breast, a bit of low cal cheese dip, and brown rice with quinoa. I mixed it all up. It was very good.
I have an algebra exam tomorrow and maybe I will look up a recipe and make something special for dinner.
