Peppermint Patties

I just made a half batch of these, testing recipes for the one closest to York Peppermint Patties, which is my favorite candy. I needen't look any farther. I just blew up my stand mixer making dog biscuits, so I was hesitant to make a full batch with my little hand mixer, thinking the filling might be too stiff for it to handle. It was perfect. I make my own extracts and these are DELICIOUS using peppermint from my garden. I'm going to make a btch of peppermint easter eggs to send to my son, who is also a YPP maven. Can't wait to get his response. I hand dipped the patties and got the semisweet chocolate coating a little too thick on some of them. Next time I'm going to combine 2/3 semisweet with 1/3 milk chocolate to cut the flavor a bit. I will say, these are GREAT and as easy as can be. I had them mixed, kneaded, pinched onto cookie sheets and pressed in less than 30 minutes. Go for it...they're delicious.

Peanut Butter Cup Cookies

I substituted buttery flavored Crisco for the shortening....made them chewier and better, I think.

Bacon-Flavored Dog Biscuits

I gave this one 5 stars but I didn't eat any of them! Left out the bacon and added chicken fat instead. The puppy next door went nutso over them.

Italian Cassata

Unexpected company! Dessert emergency! Used frozen poundcake. Had leftover candied fruit from Xmas. No orange liqueur so used bourbon. Was delightful, anyhow. Wows all around and this one is a keeper. Next time, I will do it with homemade poundcake, the right way....it can only get better!

Cherry Swirled Cheesecake

Well, folks, it's a winner. My sister asked for a cherry cheesecake for her birthday and I groaned at the time and effort it would take to produce...not to mention the expense of the recipe I had used for years. So I looked on this site for alternatives and thought I'd give this one a shot. I did and it has now replaced my old recipe as my favorite. I made no changes in the recipe except to make the crust out of leftover shortbread cookie crumbs I had frozen since Christmas. Plus, I did not want an overpowering chocolate crust to compete with the delicate flavor of the cherries. I thought about doing a fresh cherry reduction as the swirl, but I was running out of time and cherries were $6/#. So I used the store brand cherry pie filling. Gosh, it's a good cheesecake. Kudos to the developer! I am a professional caterer/personal chef...I've made a few cheesecakes in my lifetime. It's a good one. It's fast and easy and I can see where it would be deliciously adaptable.

Cheesy Potato and Corn Chowder

My husband asked for corn chowder. This is the recipe I selected. It was DELICIOUS! The only change I made was adding 2 chopped jalapeno peppers to the celery and onion during the sautee process. And I used cheddar instead of Velveeta. I served it with garlic/cheese biscuits and cooked apples. What a hit it was!

Deep Fried Oreos®

This is a heart attack on a plate, folks....but you might as well die happy. I NEVER thought I would EVER make anything like this, figuring it was just junk. But the deep fryer was out, the oil was clean, and I had all the ingredients. So....anyhow. I tasted the first one, then ate it. Then ate another one. Gosh. It was good. Now, the funny thing is I cook for a living and one of my snootiest clients tried one and is bound and determined that we will serve these, with homemade ice cream, as dessert at her next dinner party. I love it! The best things are the simplest, oldest and most Southern-inspired. I bet this came out of GA or AL or one of those wonderful-food places, where everything is truly yummy, full of flavor and not covered with some kind of reduction or deconstruction. Paula Dean rocks!!! Fry that Oreo! Next, I'm going to do Golden Oreos, fried, with chocolate ice cream.

Potato Leek Soup III

This is easy, easy, easy and sooooo delicious. I shared this recipe with my neighbors and they are still raving. But it got an absolutely RAVE review from my husband, and he NEVER raves. I made no alterations, except used 1/2 margarine and 1/2 butter to raise the cook temp a little without burning. I also made this in a deep dish skillet, instead of a saucepan...it cooked faster and more evenly.
