J.P.'s Big Daddy Biscuits

The ingredients are a good basic biscuit recipe, though I use half a cup of shortening and little or no sugar. Since it is a law of biscuit making to handle the dough as little as possible, I don't know why it calls for kneading--and 14 to 15 times!! If those babies aren't tough, then, I will be greatly surprised. I don't knead at all, and I don't use a rolling pin. Put the mixed dough out on a floured board, dust it with more flour, pat it into a round about 3/4 inch thick and cut into rounds. Gently does it. Bake as the recipe directs.

Hash Brown Sandwich

This recipe contains everything I would love to eat on occasion. However, the photo of the end result looked so messy, I am sure the cook had as much trouble turning over a plate sized sandwich as I would have. My solution: Make individual "sandwiches" of the same recipe. Handling the smaller version should be neater, easier, and make the cook happier.
