Pumpkin Chocolate Chip Cookies III

very tasty! I actually left the recipe alone except for using whole wheat flour instead of white. Makes a soft cookie, also baked some mini muffins with the same recipe.

Hash Brown Quiche

I gave it 5 stars just for the hash brown crust idea. Never thought of that before! I added some chopped red onion and sliced fresh mushrooms, used cheddar instead of mozzarella, and added some chopped hot peppers (Serrano, habanero, datil and thai chiles)to give it some zing. it really makes the crust like crunchy hashbrowns if you use a stoneware pie pan.

Shredded Potato Quiche

Cheesy Black Bean Casserole

I had most of the ingredients on hand, I substituted shredded jack and cheddar cheese for the mozzarella and parmesan. It turned out great. Just happened to search for a recipe using rice, black beans and cheese.

Tomato Zucchini Casserole

A good starting place, but the first time was too soupy. The second time, I used whole wheat lasagna noodles, (dry) browned Italian sausage, Vidalia onions, (sautéed), panko bread crumbs. Much better my way. Just saying.

Chocoalte Chip Pecan Banana Bread

This recipe was a good place to start. I only had 1/4 cup butter, so I substituted 1/4 cup cream cheese for the other 1/4 cup, then added 1/2 cup chocolate chips, 1/2 cup chopped pecans, and a tablespoon of cocoa powder. Baked about 1 hour in a stoneware loaf pan, which I think really makes the difference.

Banana Banana Bread

This recipe was a good place to start. DJ's Garlic Beer Bread

Pretty good to start with. I decreased the brown sugar to 1/2 cup, made sure the beer was nice and warm before mixing, (this is more important than you think), added about 1/2 tablespoon garlic powder, then a few shakes of garlic salt, and baked in a stoneware loaf pan, using only half the butter in the recipe. Warm beer will make your dough rise better, trust me.

Cowboy Jack's Beer Bread

Oatmeal Raisin Cookies IV

Turned out pretty good. There are very few recipes I won't tweak here or there just to take advantage of different ingredients I have on hand. The only thing I did differently was to use dried cranberries instead of raisins. I doubled up on the pecans because my family really likes them (and because my mom gave me about 20 lbs of pecans). I think soaking the dried fruit before mixing helps make the cookies a little more soft & chewy. Thumbs up from my teenagers!

Grilled Chicken Thighs Tandoori

I followed DINNERSBYDAPH's recommendation and used garam masala and lime juice, ditched the cinnamon and cloves, doubled the garlic, and cooked the chicken thighs on skewers. Way better than the other recipe.

I like it hot! I double the beans, and add a couple of fresh jalapenos, maybe a habanero or two, and substitute vidalia onion for the red onion.

Hash Brown Quiche

Loved it! I left out the onions, then I doubled the ham because we had a lot left from Easter. Then added about 1 Tbsp. Ranch dressing mix to the eggs, poured that over the ham & cheese, and sprinkled about 2 Tbsp. parmesan cheese on top. Baked at 350 for 25 minutes in my 9-inch stoneware baker. That made the hashbrown crust perfectly crunchy. Mmmmmmmm!

I combined recipes I & II. Cooked the chicken in the water, then cooked the noodles, added 1 can cream of mushroom soup, then 1 can French Onion soup and 1 Cup sour cream. Added 1 12oz pkg of frozen peas & carrots, topped with crushed garlic & herb whole wheat crackers, then sprinkled some parmesan cheese on top. To me a recipe is just a suggestion. I make changes according to what I have on hand, so I don't have to run to the store at the last minute for one or two things. The ability to improvise is the sign of a good cook.
