Banana Milk Drink

Tasty! I had a "banano con leche" (banana with milk) drink in Nicaragua, and this was the exact drink. YUM!

Health Nut Blueberry Muffins

Wow... who'd image that something so good for you could taste so great! I've tasted these as printed - amazing - and with ground flaxseed meal subbed for the wheat germ - equally delicious and so, so, so good for you. I'll be making a double batch to keep in the freezer for quick, healthy breakfasts. I also topped it with a tiny bit of brown sugar/butter/oat/cinnamon/nutmeg struesal. YUM!

Sue's Hot Fudge Sauce

Wow. These are perfect. Definitely bake until a toothpick comes out clean, otherwise the middle will be gooey. Some people like that though:) The cream cheese frosting is WAY better than pre-made.

Broiled Tilapia Parmesan

Delicious. I added the bread crumbs, and though I only used 1.25 lbs of tilapia, it was nice to have the extra topping. Not fishy at all, just the way everyone at our house likes it!

Baked Sweet Potato Sticks

As written, it's probably 4-stars, but with a tiny bit of tweaking, it was AWESOME at our house. I peeled and cut the sweet potatoes in half and then into pieces slightly bigger than matchsticks. Tossed them in olive oil, seasoned with paprika, season salt and garlic salt. Baked at 400 for 35 min and broiled a bit with the main dish (Broiled Parmesean Tilapia from this site). Delicious!! We'll make them again often!

Cheddar Beef Enchiladas

Excellent. I used 2 chicken breasts, cooked in the slow cooker with 2 cups of water and taco seasoning, shredded, along with the rice. I also added an extra can of cream of chicken soup, just because I like it SAUCY:) It made 1-9x13" pan and 1-8x8 for 14 enchiladas, total. Wonderful to enjoy today and know we've got dinner for another night.

Pretzel Turtles

Awesome. I love making these as Christmas gifts. They're a huge hit. Rolos are the best to use, as caramel Hershey Kisses get messy when you put the pecan on. Oh, and using roasted/salted pecans makes it too salty. Delicious!

Artichoke & Spinach Dip Restaurant Style

I've tasted a lot of spinach artichoke dips. Most are a little simpler with fewer ingredients than this. But this one is worth the little bit extra! I like to increase the mozzerella to about 1 1/2 cups, and the cream cheese to the full 8oz. The roasted garlic is a wonderful subtle taste! LOVE IT!

Chocolate Chip Cheesecake II

This might be a 5 star cheesecake for those that really know how to do them right. Mine turned out pretty well, considering it was one of my first. It was a bit heavy and dense, but maybe that's from my technique? I followed the instructions pretty closely, but I used the chocolate cookie crumbs from one premade crust, with some butter, pressed into the bottom of the pan. I suggest using 2 premade crusts - 1 is not nearly enough to cover the bottom, and it would have been nicer to have the crust go up the side a bit. Use a good amount of butter in the bottom of the pan and up the sides! I also baked it in a water bath (pretty easy! follow the instructions on this site) and it turned out without a crack. All in all, a good recipe, especially if you really know how to do a cheesecake!

Fancy Brownies

LOVED these brownies. The dough is very much like brownie dough - thick and hard to spread. I wasn't sure how it would turn out that I wasn't "spreading" it on the top layer, but more of dropping it around. Worked wonderfully, and these were a HUGE hit!

Southwestern Style Chalupas

Pretty good, but it really needs some more seasoning. I would add more chili powder, garlic, and probably a can of mexican tomatoes, and maybe even another can of chile peppers. I don't like too much "kick", but it just needed a bit more. You might want to add some extra water, because mine was on the drier side. All in all, a good recipe!
