Caramel Snack Mix

Great stuff!! I made this for a New Year's Eve snack, and had to slap hands to let it cool properly. Like some others, I added pretzels and used a can of mixed nuts (what I had on hand). I already bought more to make another batch.

The Best Rolled Sugar Cookies

Made these for my 'must have Christmas cutout cookies' husband. As a previous poster said, I changed the sugar to 1 cup granulated and 1 cup powdered - great idea! and used 2 tsp vanilla. They came out great! Just the right texture. SUPER recipe!

Candied Fruit Biscotti

WOW! I never made biscotti before, but everyone I gave this too loved it, and two even made it themselves after. I made it for a church Christmas bakesale and my husband wouldn't let me take more than 1/2. I like the fact that the pieces aren't huge, just about 4-5 inches long when the logs are sliced horizontally. The only changes I made were from earlier reviews, adding about a cup more flour, using almond instead of anise (didn't have anise), and using entire container of fruit (2 cups). Not only for Christmas around here!!

The Whole Jar of Peanut Butter Cookies

My husband is the peanut butter 'nut', pardon the pun, and he LOVED these. They were easy, I could even have my non-cooking niece and nephew make these, and will again.

Rhubarb Stir Cake

OH MY GOODNESS! Very good, and I HATE rhubarb! My 'make me a pie' husband even liked it. The only thing I changed was to sub 1/2 the brown sugar for Splenda Brown sugar blend and added a tsp of cinnamon. Have already made 3 times, once for work and nobody believed it was rhubarb. Four asked for the recipe. Super recipe - in my recipe box -.

Zucchini Cake III

AWESOME! Super moist, and delicious. I took it to work and it disappeared in 15 minutes. Like others, in a bundt pan, mine only took 55 minutes to bake.

Best Ever Muffins

Just what I was looking for - a basic recipe! I did swap 1/2 the whit flour for wheat and 1/2 splenda for the sugar so my diabetic mother could eat them, and mixed up 4 batches of dry ingredients in baggies to make weekly muffin baking even easier than mixes. SUPER!

Chicken or Turkey Tetrazzini

Super easy recipe. I don't know if my sub'ing cream of chicken for the cream of mushroom soup made a difference, but we had no 'lack of flavor' complaints at my house - even my non-casserole picky hubby liked it. I used canned chicken (like tuna) - one 15 oz can and added a can of peas and carrots and it came out great!

Morning Glory Muffins I

I am not great at eating things good for me, but these were OUTSTANDING! The only changes I made to the recipe was to substitute the oil and apple butter for 1C applesauce and increase the walnuts to 1/2C. SUPER RECIPE, THANKS A LOT!

Health Nut Blueberry Muffins

I made these for my diabetic father-in-law, but he only got two! My husband, mother, and an elderly friend got into them and I only have three left! Super recipe, great fiber. I made these per the recipe (only changing Splenda for sugar) and only one person could taste banana. A must have for a high-fiber low sugar diet!!

Apple Cake III

What a great recipe! I actually changed the recipe a little, I didn't have any apple pie filling, so I substituted chunky applesauce. I didn't change anything else, and it was Wonderful! What a great, simple recipe! Even the cake hater in my house loved it and said this was a keeper (and his new favorite)! 12/2010 Tried it with a can of cherry pie filling and 1/2 can of tart cherries to make muffins. YUM!!

Irish Cream Bundt Cake

I have to make this cake for my mother's church group every March for the past 4 years - they LOVE it. They like it at work too, strangely enough even though I like irish cream - I don't care for the cake, BUT I seem to be the only one. Making it from a cake mix helps a lot.

Apple Turnovers

Quick, easy and tasty! I made these with refrig pie crust I had leftover from Christmas and the only change I made was to double the cinnamon - because I always do in pie! I didn't ice, just ate as is. Is now in my Recipe box and next I will try using the new brown sugar Splenda - will let you all know the result.

Granola Bars III

ABSOLUTELY LOVED this recipe. My husband hates chewy bars and I don't like crunchy ones. These are perfect for both of us - healthy too! I just change the fill-ins with each batch and my niece(12) and nephew(9) who are complete junk food junkies even gobble them up. A permanent addition to my recipe book.

Orange Pumpkin Loaf

A wonderful orange flavor with the dense texture of a pumkin bread. My family loved it! In fact, I am already being requested to make more (and I doubled it the first time). It is in my recipe box permanently! As for advice, I found doubling the recipe yielded three 7 x 3 loaves.

Pumpkin Roll Cake

I made this recipe for a church bake sale, and after it was assembled I didn't want to take it. It smelled and looked wonderful! Easy to make and gorgeous with the walnuts on the outside!
