About this Cook
I'm a busy wife and mom of 2. I don't have much time to make big, elaborate meals so quick, easy is what I look for most. We just found out my youngest daughter is fructose intolerant...Now THERE'S a confusing dietary restriction to work around. So, life is good, cooking is a journey and I'm enjoying both!
My favorite things to cook
I love making Italian food and also baking cakes and cupcakes to decorate. I also love soups and stews just because they are simple and I can get it going in the crock or on low on the stove then walk away!
My favorite family cooking traditions
Just being in the kitchen with my two girls cooking! I absolutely love it. Although, a nice big gourmet kitchen could make it better :).

Pumpkin Shortbread Bars
The short...very yummy! The long, I started off with one batch of crust but had to end up making 3. Turns out 3 is just a tad too much, 1 is not enough. 2 Will be perfect when I make them again. Filling definitely needed some spices. I'm glad I read reviews. I ended up adding 1 tsp each of cinnamon, nutmeg and ginger. Definitely cut WAY back on the flour for the topping. I did 1/3 C as someone else suggested. It was a bit time consuming for me although simple. Will be a nice change for Thanksgiving. Thank you for sharing.

Mexican Casserole
This was pretty good. I would make it again but with some changes. As others suggested, I would not drain the corn. It needs the extra liquid. I would also add more salsa...only because my husband and I really love salsa lol. Lastly, I would boil the chicken until tender then shred it rather than cutting it into chunks and cooking it over oil. Thank you for the recipe :).

Southern Fried Cabbage
YUM! We love cooked cabbage but this just put it right on the top of my favorite side dish list! My husband made turkey kielbasa with it and threw it in at the end and well...JUST YUM! Fantastic flavor! Thanks so much for sharing!
