Chicken and Dumplings III

Reviewed: Aug. 28, 2003
This is an excellent base recipe. I was only cooking for two and wanted minimal leftovers so this is what I did. Took three boneless skinless chicken breasts and boiled them in one can of chicken broth and water to cover for 15 minutes. Took them out of the pot to cook and removed about 1/2c-3/4c of the liquid. While it was cooling I added 1 more can of chicken broth, 1 can cream of celery, 1 can cream of chicken, frozen peas, 4 carrots and a package of frozen egg noodles since I didn't have anything for dumplings. I tore up the chicken after it cooled, added it to the pot and let it all simmer for about 5 minutes. Some salt and pepper and I was in heaven! Hope this modification helps some ! Thank you for this inspiring recipe!

Spicy Garlic Lime Chicken

Reviewed: Mar. 28, 2003
Excellent! I had frozen chicken tenderloins that I just defrosted in the microwave while heating the butter and oil. I didn't have paprika on hand and didn't add the onion powder. I used a bit of fresh garlic instead of powder. We LOVED it. I had some leftover baked potatoes that I sliced up and cooked in the same pan and it picked up the leftover spices and lime flavor. Thank you for this recipe!

Jamie's Cranberry Spinach Salad

Reviewed: Aug. 23, 2003
This was so wonderful-I can't wait to make it again. I used half the spinach and just saved half of the dressing. I thought it wouldn't keep but it was even better the next day-just added it to another package of 10oz of spinach. Thank you for sharing this great recipe!

Absolutely Ultimate Potato Soup

Reviewed: Aug. 23, 2003
This really is the ultimate potato soup-thank you for sharing. The only thing that I do different is I only use about half a package of bacon and it still seems to have a great flavor.

Banana Crumb Muffins

Reviewed: Aug. 28, 2003
This is a very good tasting banana muffin. The amount of muffins it makes is much more than 10. I squeezed the batter into a 12 muffin pan and had a bit of an overflow of the topping. Next time I'll make half of the topping so I don't have to soak and scrub it off the pan! Thanks for a great banana recipe.

Best Lemonade Ever

Reviewed: Aug. 28, 2003
Wow am I glad I stumbled upon this recipe and tried it. Better than any store bought lemonade and about as easy to make! I used 6 large lemons and it was the perfect amount. Didn't need to alter anything-it tasted great!! Thank you for sharing this!!

Orange Sherbet Salad I

Reviewed: Aug. 23, 2003
This was really good. I omitted the bananas since the ones I had were a bit too ripe and I only had 1 can of oranges but it was still a great easy dessert. I recommend letting the sherbert sit out for half hour or so so that it softens and you don't have to sit there and stir and stir for so long until it melts. Thanks for sharing this recipe.

Rainbow Salad

Reviewed: Aug. 23, 2003
This is such a great idea and a hit at a dinner party. I mixed the jello with 1 cup of boiling water and then 1 cup of cold water so that it was at room temp. right away. I also only did two boxes at a time so that they wouldn't set up before they got into the dish! Thank you for the great idea!
