Barlow's Blackened Catfish

TOO SALTY! This dish tasted good and was easy, but man was it salty. We actually already halved the salt and used 2 tsp for 2 lbs of catfish, and it still tasted extremely salty. I would either cut out salt next time since the other spices already give it plenty of flavor, or use 1/4 tsp per pound of catfish.

Katie's Chicken and Broccoli Pasta

My boyfriend really liked this dish because it felt much more healthy than the usual alfredo pastas we have. I took another reviewer's advice and coated the chicken with flour first, then browned it in corn oil which gave it a nice golden brown crisp. I added red bell peppers to the vegetable mix to give it some color. I also added some lemon pepper and garlic to the vegetables. I liked the way the chicken and veggies tasted but I was not used to eating the noodles completely bland, so I ended up adding olive oil and parmesan to the noodles.

Tantalizingly Tangy Meatloaf

This was my first time making meatloaf. I also used a packet of onion powder and 1/4 can of crushed pineapple instead of pineapple preserves as others have suggested. It tastes delicious! The only thing I would change next time is I would double the recipe because it only filled up half the 9x5 inch loaf pan. I thought that it would rise to fill up the whole plan but it didn't, so the meatloaf wasn't as tall as I expected. It only ended up being about 2 inches tall.

Dominican Style Oatmeal

This recipe was delicious. I didn't have quick cooking oats so I used original oats and it still turned out fine. I just cooked the oats for 5 mins instead of 2. Also, I noticed it was looking more watery than I liked, so I decided to use 3/4 cups of oats instead of 1/2 cup and kept everything else the same. I would probably use slightly less sugar next time as well, perhaps 1.5 tablespoons instead.
