Smashed Cauliflower Side Dish

I boiled a fresh head of cauliflower in water and chicken bouillon, drained the water, and used an immersible blender to mash it. Added garlic powder, a little cheddar cheese, and Spreadable Balance margarine substitute. It was delish! Hubbs raved, one kid didn't like and one kid ate all the leftovers in the pot. It was a bit on the watery side, but full of flavor.

Mexican Cream Cheese Rollups

Very tasty, a good and easy appetizer. Made it this am and took it to a pool party, went over well. I followed some reviewers suggestions and made a few changes: Instead of green olives, I used a can of diced green chillies, I added a dash of garlic powder, tossed in a little Mexican blend shredded cheese, and a few TBS of salsa. It was delish! I'll be making this again, thanks for the recipe!

Mini Cheesecakes I

Very good, very easy, big hit! Love the Nilla wafers as a bottom crust. Only 4 stars because it didn't feel like a "real" cheesecake to me. Still absolutely delightful!

Chicken Tetrazzini IV

Yum-my! I doubled the recipe and used the evap milk instead of cream, plenty of chicken stock, 1 lb of spaghetti noodles broken into 3rds, sauteed fresh sliced mushrooms, garlic and onion and held aside until later, Parmesan in the roux, bread crumbs and Parmesan on top, chopped leftover turkey... it made 2 large casseroles and my family feasted on this so rich, so tasty, so comforting meal.

Too Much Chocolate Cake

This was an utter flop for me. I followed the directions as written, didn't know if I was supposed to flour the pan so I did so lightly. This was sickeningly oily, made a mess of my oven, and did not taste good. I trusted the reviews and took it (without trying it first) to a Christmas party where I'm usually asked to bring dessert. In general, I make decadent desserts from scratch, so I put a lot on the line by cheating with a box and bringing this to the table. It was politely nibbled. Too bad, I had high hopes.

Mulligatawny Soup I

I had never had Mulligatawny soup before, and I wanted to try something different. It's just like Mom's curry over rice, but in a soup! Fabulous flavor - absolutely delish! Can't wait to heat the leftovers up for tonight's dinner! I used chicken thighs instead of breast because I like them better in soups/stews. And 1/2 and 1/2 instead of heavy cream. I doubled the recipe for a big pot and it made plenty! Served with fresh French bread. YUM!!

Easy Turkey Curry

Very good, quick and easy to make with items on hand. I used leftover turkey and pork, a little more curry to taste, and a garnish of coconut. Yum! Will be keeping this recipe!

French Silk Chocolate Pie I

This pie did not work for me. I followed the directions exactly with the addition of "Barb's" advice of whipping the egg whites and 1/4C sugar to stiff peaks and folding it in. I chose not to double the recipe and see how it did with the stiff whites/meringue. I beat it for 10 minutes and the sugar never dissolved, end product was lacking taste and very grainy. It's so rare that I throw a dessert out... but this one goes in the trash.

Dump Cake IV

I was really excited to try this recipe, not only because of the great reviews, but a friend and my sister both have raved about dump cake. I followed the directions exactly, including using a bundt pan, and it never set up. There was just too much liquid. I baked it, checking regularly, for at least 2 hrs (covered the top with tin foil after it browned) and it was a disaster. I make plenty of scratch cakes and complicated desserts, so I didn't expect this outcome. Guess I'll have to stick with scratch!

Zucchini Bread IV

Very delicious, moist bread. I used 1 cup white sugar, 1 cup brown sugar, 3+ cups of zucchini - and still could've used more, and substituted chocolate chips for the walnuts. Excellent!!

Manicotti Italian Casserole

Whole family gobbled it up - which rarely happens at my house. I used ground turkey and turkey sausage, 1 jar spagetti sauce plus 1 can tomato sauce, added basil, s & p, onion & garlic, mixed the mozzarella and pepperoni in and then topped it off with more mozzarella and pepperoni. Husband said he likes it better than lasagne! Easy dish and what a hit! Thanks!

Baked Pork Chops I

My first success with pork chops, woo hoo! I used the thin ones, so I baked it for only 30 minutes and they were still tender and moist. My husband absolutely raved about them and ate the leftovers for breakfast, lunch, and dinner - a first for him, too! Definately will be added to our recipe rotation. Thanks for the great recipe!

Glazed Meatloaf I

Wow! My ho-hum meatloaf is out the window, thanks to this new recipe! Husband raved, kids prefered it the 2nd night and ate it up, I loved it! Definitely a keeper! Thanks for the great recipe!! PS- I used ground turkey.
