Baked Ziti I

Reviewed: Aug. 24, 2003
I made this for my husband, daughter and sister and we all LOVED it! I did sort the suggestions by most helpful. After reading the suggestions, I mixed the pasta with the sauce and added generous minced garlic while browning the ground beef. I loosely covered the dish with foil during cooking, except for the last 10 min. Other than that, no changes. My husband and daughter asked that I make this regularly, and I will.

Can't Get Enough Caramel Cookies!

Reviewed: May 3, 2003
I learned the hard way that you CAN'T use GENERIC oats- use name brand or you will have a crumbly mess! With name brand oats, this is wonderfully addictive!

Nordy Bars

Reviewed: May 21, 2003
This is a fantastic bar cookie/brownie! My husband and daughter agree :) It is delicious as is, but I could easily see it without the nuts and marshmallows and it would still be delicious. The only issue I had was when I mixed the egg in after removing the pan from the medium heat - next time I will allow the mixture to cool slightly before adding the egg, because the egg cooked a bit. It didn't affect the end result, but I didn't like having cooked egg in the mixture. When I took the bars out of the oven, they looked very raw in the middle, but I took them out anyway. After about 2 hours they did firm up and were perfect. I personally liked them even more the next day! I can see bringing these to gatherings and bake sales with great success!

Scrambled Egg Muffins

Reviewed: Nov. 9, 2007
I had to bring an egg dish to MOPS today and didn't have a lot of time. These egg muffins were a HIT, and SO easy to make. People were asking how I made them. The muffins weren't "pretty", but they were good. :) (I used bacon instead of sausage, and Tastefully Simple Onion Onion instead of actual onion. Left the green pepper out because not everyone likes green pepper.) It was really good!

Deep Dark Chocolate Cake

Reviewed: May 30, 2003
I know there are already a lot of reviews, but I'll add mine :) This cake and frosting recipe is the absolute BEST!!!! I have never had luck with frosting- past recipes have come out grainy or the sugar overpowers the flavor. This frosting turned out so delicious~! I didn't have any problem it being runny- I just added a little bit of milk at a time assuming that I might not need it all. I did end up using all the milk and my frosting had a "whipped" effect. It wasn't the least bit runny. I don't think I can ever eat a cake mix or canned frosting again without thinking of this recipe!

Chicken or Turkey Tetrazzini

Reviewed: Jun. 5, 2003
I didn't change a thing about this recipe and it was DELICIOUS! I seasoned boneless chicken breast and cooked in a little oil for this recipe. Like others, I didn't know where to find "american" shredded cheese, so I used cheddar, which was so good, but I will also experiment with other cheeses in the future. I had never had tetrazzini before, but my husband was craving this comfort food he had during his growing up years. I really didn't know what recipe to use, but I must have picked the right one, because he said this one was better than the one he grew up with! I didn't add any milk, and we had no problems with the dryness that others experienced and it was still moist the next day for leftovers. Definitely a keeper!

Light & Tasty Chicken Stroganoff

Reviewed: Jun. 6, 2003
Absolutely SCRUMPTIOUS! Husband and picky 4 yr old approved! I used all of the ingredients called for, but not the low-fat or low-salt versions- and broth in the place of white wine. This will be my regular stroganoff recipe! I'm looking forward to trying this with beef also :)

Gourmet Chicken Pizza

Reviewed: Jun. 12, 2003
My husband was VERY skeptical about trying a pizza with no tomato sauce and chicken instead of pepperoni...He and my 4 year old are very picky eaters, but they tried this and ended up loving it! I didn't change much about the recipe, except I used 2 prebaked pizza shells, since I don't care for the refrigerated dough, and doubled the recipe for leftovers. I cooked the chicken with some Morton's Nature Seasons and a couple cloves of minced garlic. This pizza was filling and delicious!

Grandma's Homemade Banana Bread

Reviewed: Jul. 20, 2003
I LOVE this banana bread! I normally use a betty crocker recipe, but decided to try a new one. Another recipe I tried on this site that had hundreds of reviews, did not taste good at all to me or my family- and I used a lot of bananas for that recipe! I only had two overripe bananas, but decided to try this easy recipe, rather than throwing them away. With less banana than called for, it tastes like a sweet bread with a taste of banana. The texture is really wonderful in this bread- not too heavy, and not too dry or too moist. Perfect :)

Mom's Baked Macaroni and Cheese

Reviewed: Aug. 14, 2011
I have tried sooo many mac n cheese recipes, and my family has hated them all. This is the first homemade mac n cheese recipe I've made that they love. I love how easy it is to make! It did need two cans of soup, and I had about 1/2 cup sour cream I needed to use up, but other than that, no changes were made. This will be in the regular rotation. :-)

Tina's Shortbread Chocolate Chip Cookies

Reviewed: Aug. 25, 2003
This is a delicious, crisp, buttery, chocolately cookie! I used salted butter because that is what I had. I didn't have any nuts, so I didn't use them either. Despite these changes the cookies were still wonderful! The cookies looked raw after baking them 25 minutes, but I took them out anyway and put them on the cooling rack. After about 15 minutes, they were crisp and still warm. My husband brought some to his friends at work and they loved them! I plan on doubling the recipe next time :)

Pot Roast in Foil

Reviewed: Sep. 10, 2003
I had never made pot roast in the oven, so I wanted to try this recipe. I have made almost this same recipe in the crock pot, and prefer it that way. The only difference with the crock pot, is to increase the water to 1/2 cup and cook on low 8 hours, or high 4 hours. The gravy is thicker in the crock pot and is all contained, rather than all over. I will make it this in the oven on a cold winter day to warm up the house though.

Beef Stew VI

Reviewed: Dec. 13, 2003
I didn't change a thing about this recipe. This was the best stew I have ever tasted! My husband and picky daughter loved it! The meat literally melts in your mouth. My 5 year old daughter is not crazy about meat, unless it's chicken tenders, and the first thing she said was, "Good meat mom!" That was enough for me to add this to our permanent recipe file. It's also delicious left over.

Creamy Potato Casserole

Reviewed: Dec. 13, 2003
My family loves anything with potatoes, and this recipe did not disappoint! The only thing I changed was using cream of chicken soup instead of the cream of potato. It was a good, flavorful casserole that I'm going to use at a Christmas brunch.

Broccoli Rice Casserole

Reviewed: Dec. 13, 2003
This was a very good casserole that I brought to Thanksgiving dinner at the relatives. I did not cook the brocolli first, because chopped brocolli cooks very quickly. I read a few other reviews about how the casserole lacked "pizazz". It's brocolli, I don't expect it to have pizazz, but I like it to be cheesy :) I added shredded cheddar cheese to the top in the last 10 minutes of cooking, and it was wonderfully, deliciously cheesy. Everyone ate it and liked it, so I'm assuming it was a hit!

Easy Beef Strogonoff

Reviewed: Mar. 4, 2004
To make this a better stroganoff, spice up the ground beef with your favorites, use 8 ounces (1 cup) of sour cream, add a bit of worcestershire sauce and a couple tablespoons of ketchup before adding the sourcream. A simple stroganoff doesn't taste the same to me without ketchup.

Easy Red Beans and Rice

Reviewed: Jun. 24, 2004
This tasted great! My husband, daughter and I all really enjoyed it. I would definitely double the rice next time though. I used smoked sausage, and made the recipe exactly as written, except for a tiny pinch of red pepper flakes for a "kick".

BBQ Pork for Sandwiches

Reviewed: Aug. 21, 2004
Can I give this 10 stars?! This was sooo good and easy, easy, to make! I used Sweet Baby Ray's Barbeque sauce which is our favorite. I had my mom over for dinner and she asked for the recipe right away. She was shocked how easy it was. My husband and daughter loved it too. I'm so happy that I found this recipe. UPDATE- Accidently bought regular pork ribs this time, the kind that have bones. What a mess trying to get all the bones out! Will be more careful to make sure what I buy is boneless. It was still just as good though, except for the tiny bones we hit!
