Baby Back Ribs

I adapted this a bit - rubbed ribs with Pappy's seasoning (after removing membrain) then lined a cookie sheet with foil put ribs on then covered tightly with another sheet of heavy duty foil. Cooked for 2 hours then drained fat off, lathered with BBQ sauce (we like Bullseye) and put under broiler for 20 minutes, and they turned out very tender. (This summer will try grilling instead of broiler) Serve with roasted veggies and baked potato VERY EASY meal.

Butternut Squash with Onions and Pecans

Had never tried Butternut Squash and this was the perfect recipe for first time. Thanks for posting Christine. We can not eat pecans so after cooked added a little cinnamon - turned out great. Used other posting suggestion to peel with veggie peeler before cutting and seeding and worked out great

Marinated Grilled Chicken II

super easy and SO GOOD - used bone in thighs (took off the skin) and adjusted grilling time to 6 - 8 minutes per side, used Kraft Zesty Italian dressing and used garlic pepper (instead of lemon pepper). Only made all the changes because that is what I had on hand.

Caramelized Baked Chicken

I have used this sauce twice, once on wings and once on cut up boneless breasts, took other posters advice and cooked the sauce ontop of the stove first then poured over chicken to bake, and it turned out GREAT both times - prefer the breasts served over steamed rice (less messy to eat)

Mexican Baked Fish

Easy, easy and delicious - what more can you ask for - I used frozen fish and cooked it 1/2 the time drained the liquid then added the salsa, cheese & tortilla chips and put back in for remainder of time - turned out perfect.

Garlic-Lime Chicken

Originally found this on Tyson Recipes site - and it calls for reduced-sodium soy sauce (which I always use for cooking). Hubby not a lime lover so I use 1/2 lime juice and 1/2 lemon juice - (note to those who think it is to salty, the longer you marinate the more salt (soy) soaks in) I cook these on my George Foreman Grill for 5 to 7 minutes TOTAL and they make a GREAT fast meal!!

Chicken Wings Fricassee

YUMMMM - This is a simple and delicious way to do wings. Meat just falls off the bones. Was to hot out to BBQ so was looking for something easy to do inside. Did a few changes - We like the tips so left the wings whole. The seasoned salt we like is "Garlic Pepper" so omitted pepper and used extra of it. Also took advice of some of the others and used chicken broth instead of water and increased to 2 cups. Sauce was great over the rice. Turned wings 1/2 way through the simmering. Even hubby (who isn't fond of much that isn't BEEF) said this is a keeper. Thanks for posting this Sandra.

Chicken Katsu

EASY & FAST - I changed this a bit - didn't have panko so used seasoned Italian bread crumbs. Added garlic powder and pepper to flour and omited salt. Used olive oil for frying. Husband who isn't a big chicken fan said "best chicken" he had.

Smothered Green Beans

This is excellent (we aren't big bean eaters but wanted to make them for Christmas dinner because in-laws like beans) - I took advice of others and steamed the beans while browning the mushrooms and onions and I used bacon bits - turned out great

Oven Roasted Red Potatoes and Asparagus

Great dish - I read the other reviews before making this and took some of the comments in to consideration - I used garlic powder (didn't have any fresh garlic on hand)also used parsley and basil instead of the rosemary - seasoned to our liking instead of measuring - cooked potatoes longer before adding asparagus as we like it crisp. Thanks for the great idea.

Cabbage Jambalaya

Great dish - didn't have celery on hand so used bell pepper. I used "Chicken/apple" sausage and extra lean hamburger (which made it lower in fat),Napa cabbage and added some Mexican seasoning.

Tri-Tip Rub

Excellent rub - I used Kosher salt instead of table salt - and ground all ingredients pestle and mortar style. Then I rubbed the roast and wrapped in foil and put in frige for 6 hours- WOW what flavor.

Greek Style Garlic Chicken Breast

Excellent - didn't marinate over night but did all day - still VERY tender and flavorful - I cooked the chicken on my George Forman grill and it turned out great - can't wait to try it BBQ style. Even hubby who isn't a chicken fan liked it.
