Blue Cheese Potatoes Delmonico

The general idea of the flavors (potatoes/BlueCheese) sounded great, but the recipe is ALL WRONG. Should probably be around 3T. Butter and 3T. Flour and NOT 1/2 cup of each. That would make a very thick sauce, or if cooked for 20 minutes, I would think a brick. I started the recipe not realizing the measurements and ended up making around a triple batch. The recipe has you cooking the flour for 5 minutes and then after adding the flour, cooking an additional 20 minutes. I think the person making the recipe just meant it to be 2 cups of a white sauce and then add blue cheese. If I make this again, I would do as above (probaby use 2C milk instead of 1/2 cream), and also add onion to the butter or maybe onion powder. If you add too many seasonings I could see them taking away the mild flavor of the blue cheese (which will be mild once mixed with potatoes). Altogether, I like the idea of adding blue cheese for something totally different than what we would normally cook, but the recipe is totally wrong. I felt I wasted a lot of Blue Cheese on my first try, which is considered a luxury food in our household. I am leaving a 2 star review just for the unique idea of this dish. What a clever idea of adding Blue Cheese to potatoes. Made my mouth water just thinking about it.

Molasses Sugar Cookies

These cookies were good. They were not hard-crunchy or soft-chewy, but in between, which is the way many people prefer. I cooled the cookies on waxed paper. If you do not like a strong clove taste, I would cut the clove down to 1/4 teaspoon. If you prefer the soft-chewy cookie, I would also consider replacing 1/2 the shortening with butter. Overall the cookies were good, and having to admit, they tasted wonderful with my coffee this morning. :-)

Chewy Granola Bars

Never made before and will never buy prepackaged again. Brought to campout and was a hit. Added apple sauce and anything that sounded good from the pantry...cranberries, mixed nuts, raisins, wheat germ, etc.

Spicy Baked Sweet Potato Fries

These were wonderful. First batch used olive oil, which I believe made it burn quicker. Second batch, used veg oil, skinned sweet potato, cut ends and sides of potato to make chips, and used the rectangular potato to make perfect in size from one end to the other. Placed on center rack, instead of top rack. These are great! I didn't have taco seasoning, so made the homemade stuff off this web site and it was great also. "Taco Seasoning I " by Bill. It is so good!

Spiced Pumpkin Seeds

Enjoyed this recipe. Added garlic power instead of garlic salt, then added parmesan at the end for the saltiness. Was sad after Halloween when I could not find any marked down pumpkinds.

Baked Potato Skins

Yum! I had a huge bag of small potatoes and froze a lot of it with bacon (some with cubed ham) and cheese already toped. Froze well, but have to admit they only lasted 3 weeks in the freezer. Was a great last minute treat for meetings and company.

Peanut Butter Cup Cookies

Easy to make. Found that pressing down with back of spoon was easier than using the pb cup to do the pressing. Would start melting. Very fun for the kids.

Cheese Garlic Biscuits II

I made a lot of changes to this recipe, but I am sure without my additions, this recipe would have been wonderful. I converted to make a double batch and put half the dropped-dough on a greased cookie sheet to freeze Biscuits for later use (after frozen will put in freezer bags). I used garlic powder instead of fresh minced garlic, also added additional garlic powder to the flour mixture since we are garlic lovers in the household. Also added fresh parmesan to the cheese, and also added parsley to the butter baste. Kids loved it, husband cooking another pan of it right now since he didn't he thought just getting 3 was a tease (they are quite addicting). Biscuits stuck to the pan a bit so using greased pan on the next batch to see if helps.

Banana Crumb Muffins

These were TOTALLY AWESOME as recipe originally shown. Started throwing overriped bananas in the freezer so that I could make 3 batches at one time. Daughter and I make mini's and eat right out of the freezer.

Real Hummus

These was wonderful! Just keep all ingredients on counter until complete so that you can to suit your taste. I added extra tahini, andother time just extra lemon juice, another time I added cumin. All was good with pita chips and as a spread in tortilla roll ups.

Fried Mozzarella Cheese Sticks

I made a huge batch for a group of teens and they were gone in 2 minutes. Made this recipe as shown and only alteration was using mozorella cheese instead of string cheese (which I believe is the same thing just not paying for the cute little shapes and prepackaged).

Deep Fried Dill Pickles

Awesome! I suggest NOT altering the authors recipe the first time. They will be loved by all. Love dipping in ranch dressing; have altered a few times for a change of pace, but no need to do so. Not any better than the orginal version. Jalapeno strips sound great with this. Another time sprinkled w/ ranch powder, used milk w/ lemon juice to make alt buttermilk, we buy whole pickles and cut some thick and some thin. Again, no reason to do any of it, was just a change of pace.
