Southern Dill Potato Salad

I used fresh dill (I love dill and used quite a bit, to suit my taste) and I didn't have a white onion on hand but a red onion. Also, just because I like pickles in my potato salads, I chopped up a few baby dills, just for some additional "crunch" (although the celery does a fine job of adding texture). My potato salad was "scarfed down" at the recent 4th of July BBQ. Great recipe!

Mimi's Zucchini Pie

This was wonderful!!! I did not have any "baking mix" but substituted some home-made self-rising flour (the recipe can be found on All Recipes) and added an additional tsp. of baking powder and about an 1/8 of a cup sugar; it turned out just great. As many of the other reviewers have noted, playing with variations of cheese or even the addition of some herbs can make this a very versatile recipe. My favorite variation: the addition of some chopped fresh parsley (not quite a "mince" but more than a "rough chop") and mix it in with the batter. Perfection!

To Die For Blueberry Muffins

I just made these and 5,804 reviews are not wrong. These were some of the best muffins EVER. I followed the instructions to the letter and they turned out exactly like they were supposed to. The only thing I might do differently next time is switch out the Milk for Buttermilk (like some others have suggested) for a little added zing. Wonderful recipe, thank you for sharing!

Peach Cobbler

I LOVE this recipe. It has become a requested favorite in my household and it is no lie that this is easy and quick to make. As other reviewers have noted, doubling the peaches is a good thing as well as retaining some of the juice (even more than recommended). I have made this recipe with both frozen and canned peaches; in the case of frozen peaches, add a little water and sugar when you are heating them on the stove so they don't burn (if you have some pear juice on hand, that would be best). And adding some cinnamon and nutmeg to the peaches (canned or frozen) is a must. I also sprinkle the cobbler with a cinnamon AND sugar mixture before it goes in the oven. Delish! Highly recommended recipe.

Grandmother's Buttermilk Cornbread

This cornbread is awesome. In terms of personal preference I changed a couple things: I like my cornbread to be a little more "corn-mealy" so I added 1 1/2 cup of cornmeal to 1/2 cup flour. Also, adding fresh (or frozen) corn is an awesome addition (about a 1/2 to 2/3 cups, depending on personal preference). Really, truly awesome results: it was devoured and my guests (some of whom claim to dislike cornbread) had seconds.
