Shanghai Noodle Salad

I really enjoyed this and it went over well at my labor day picnic. I had to use Soba buckwheat noodles though b/c I couldn't find the ones listed in the ingredients here. It made a ton though! I also added cucumber matchsticks. I think next time I might add some peanuts.

Buffalo Style Chicken Pizza

I used a pre-made crust (Generic Boboli), Perdue Shortcuts chicken and only 8 oz. of dressing. I used Ken's Buffalo Wing Marinade b/c I wasn't sure what "hot sauce" to use. When I was putting the dressing on I couldn't imagine putting on the whole 16oz. I substituted ranch for bleu cheese b/c I had some children eating it that i wasn't sure if they liked bleu cheese, so bleu cheese is thicker - maybe that would make a difference. Anyway, we loved it. Will definitely make it again.

Angel's Pasta

We really enjoyed this. My DH loves things that are on the blander side so he thought it was awesome. I think next time I might add some crushed red pepper to perk it up. I used the roasted garlic angel hair pasta and that gave it a zip I think would have been missing otherwise. Thumbs up and very easy and quick for a summer meal.

Pasta Con Broccoli

We really enjoyed this. I also added more tomato sauce (about 3 oz). I substituted zucchini and yellow squash in for the mushrooms and used extra broccoli as recommended. I also threw in some jumbo lump crab meat. Very yummy - my husband loved it and he hates alfredo sauces.

Zucchini Saute

This recipe was really easy. My picky picky husband loved it. I sauteed the garlic in with the onion instead of waiting. I also added a spaghetti squash. I used DelMonte Diced tomatoes with garlic, onion and olive oil instead of fresh tomato. It worked well although I drained off the liquid before serving. I added scallions when I added the tomatoes. I didn't have "italian seasoning" but sprinkled with some parsley, oregano and basil. Very easy and will add to the regular veggie rotation.

Goulash I

DH loved this recipe. It was really easy but I found it slightly bland. I substituted julianned green beans (canned) instead of the corn and used pinto beans instead of kidney beans. It was still tasty. I'm going to add some fresh garlic next time. I also let it sit on low for 10 minutes after I mixed in the noodles so they got more flavor from the meat mixture. Overall - we will make it again! Thanks.

Italian Style Flounder

We love this recipe - it is sooo easy. However, instead of using fresh tomatoes - I just pour over the fish a 15 1/2 oz. can of diced tomatoes with garlic and onion (undrained). I also sprinkle on some garlic powder. Fast and easy to make. We love to serve it with broccoli.
