Creamy Spiced Coleslaw

Reviewed: Feb. 20, 2013
I read the reviews and reduced the amount of mayo. to 1/2 cup which was the perfect amount. This slaw is creamy and tangy and very good. I might increase the amount of vinegar next time to give it even more tang. Also, I enjoyed the addition of the celery seed and think a little more of this will give it even more zing. Overall, it was very good and I will be making this again.

Christmas Breakfast Sausage Casserole

Reviewed: Dec. 28, 2012
My family did not like this recipe. It was bland and did not taste very good. I have been making Christmas Morning Pie (another recipe you can find on this website) for several years. I wanted to change things up this year, and decided to try this recipe. I will never make this again. The texture was okay but the flavor was bland! Nobody ate it.

Cheese and Bacon Potato Rounds

Reviewed: Dec. 4, 2011
These were edible but the taste fell flat. I added salt, sour cream and even a dash of hot sauce but the flavor just wasn't there. Something is missing but I'm not sure what. I won't make them again since there are many good potato skin recipes out there that are yummier.

Refreshing Spaghetti Squash and Cucumber Salad

Reviewed: Nov. 14, 2011
This seemed like a different and interesting way to prepare spaghetti squash. I served it for company. It was NOT a hit. The flavor was okay but most people did not care for the cold spaghetti squash. I also found it to be too heavy on the lemon flavor. I think adding feta cheese could improve it but overall, I don't think I'll make this again. It was a lot of work and not worth it plus what waste of expensive kalamata olives! You'd be better off making a standard mediterranean salad than making this salad and it really doesn't look very good.

Venison Tequila Chili

Reviewed: Sep. 20, 2011
This recipe was very good. I pretty much followed it as written but did make the following changes: 1. I used fresh jalapeno instead of red pepper flakes and sauteed them with the onion & celery. 2. I added more chili powder, plus used cumin, coriander, and cayenne pepper. 3. I omitted the orange juice. Other reviewers have said that this lends a nice flavor but I don't think orange juice has any place in chili. The end result was quite tasty. I didn't even need to add sour cream to my bowl (a chili staple). In fact, the sour cream ruined it for me which is testimony to how tasty this chili is on its own. My only complaint is that it was too runny. Next time, I will pull back on the sauce or add more meat. Otherwise, this is definitely a keeper and I will make it again.

Dad's Kickin' Jamaican Wings, Mon

Reviewed: Jun. 21, 2011
These are very good. My family couldn't stop eating them. I paired this dish with baked beans and coleslaw for an overall yummy meal. The sauce has a fresh and flavorful taste. Following are the changes I made or will make the next time I make these: 1. Use fresh jalapeno instead of pickled. I did and it is the way to go for added fresh taste. 2. Make more sauce than the recipe calls for. The chicken can be somewhat dry if you use all of the sauce prior to roasting. This sauce is so good that you can use the extra for dipping and added moisture after they are done cooking. 3. Rotate the wings every 30 minutes. I neglected to do this and while they were quite good, they ended up being kind of burnt on one side and not very crisp on the other. Overall, an excellent recipe and I will make again.

Baked Ziti I

Reviewed: Jan. 8, 2011
This recipe was good and easy to make. It's also quite filling! Like other reviewers, I also had a concern about the sour cream but found that it worked just fine. Because I have never made baked ziti before, I followed the recipe pretty closely and only added oregano and garlic powder. The next time I make it, I will do more of what I do with my standard meat sauce: garlic, onion, red wine, and oregano. A little bit of extra effort will yield an even yummier meal!

Italian Peas

Reviewed: Nov. 28, 2010
Just okay, nothing spectacular. My husband has been making a variation of this dish for years. He doesn't use chicken stock. and I think this is an unnecessary step. Keep it simple and enjoy.

Joe's General Tso's Chicken

Reviewed: Oct. 5, 2010
This recipe was good! I didn't have rice wine and substituted white wine. It turned out fine. I also didn't have small red chilies so I substituted crushed red pepper and sprinkled that in to taste. I did chop one half of a poblano pepper to give the meal a "green" taste and not just heat. Other additions were that that I cut up one large head of broccoli and sauteed that with onion slivers and the poblano pepper in a ginger-based stir fry oil. (The best General Tso's chicken I ever had contained broccoli; the standard recipe is very unhealthy if you make it without vegetables.) When finished, I tossed the whole thing with green onions and sprinkled some chopped peanuts on top. Authentic General Tso? Maybe not. Absolutely delicious? Yes. I will definitely make this again.

Very Fruity Rum Punch

Reviewed: Sep. 22, 2010
This was easy enough to make and people really liked it. I used vanilla banana rum since I had this on hand along with banana liquer. I don't really like sweet drinks but as I said, others seemed to enjoy it. Personally, I think you could go a bit heavier with the rum to make it a more potent punch.

Best Beef Stroganoff

Reviewed: Sep. 22, 2010
This recipe was okay but not great. The steak was very tender and I think if more was used, this meal would be more satisfying. I omitted the lemon juice per other reviewers' suggestions; I couldn't see why this was an ingredient. It was easy and tasty enough but I don't think I will make this again since there are so many other beef stroganoff recipes to try. Also, I think adding peas to this would bump it up a notch.

Bacon Ranch Pasta Salad

Reviewed: Jun. 1, 2010
Less than impressed. Based on the reviews, I was expecting something tasty and easy to make. While this salad is definitely easy to make, the end flavor was somewhat bland. Everything blended together and tasted the same. There were no standout flavors. My husband liked it but I made it for a BBQ and it was not a major hit. I will not be making this again.

Parmesan Asparagus

Reviewed: May 21, 2010
Very tasty and easy to make. I did as another reviewer suggested and simply drizzled olive oil over the asparagus and then turned them to coat. Other changes were that I used fresh chopped garlic instead of garlic salt. I sprinkled the asparagus with chopped garlic and salt and also drizzled lemon juice on top as suggested by other reviews. I then baked them rather than adding the garlic/salt after they were cooked. I don't really see the sense in adding garlic salt after cooking. I actually ate the finished product both with and without parmesan cheese. Delicious either way. I will make this again since it was so easy.

Chilled Russian Salad Dressing

Reviewed: Apr. 30, 2010
I should have rated this a long time ago. It is quite simply excellent. Easy to prepare and much better than anything out of a bottle. I like to make this salad dressing to go with "Tasty Tender Pork Tenderloin" which you can find on this website. The little bit of extra effort is well worth the end result: Succulent and Delcious!

Pancho Villa Baked Tilapia

Reviewed: Apr. 30, 2010
I wanted something different and decided to try this recipe. This was not to my liking in my opinion. The end sauce had a strange and unappealing taste. I normally love cilantro but I didn't think it worked well with this recipe. Neither my son nor I could finish it. You would be better off sprinkling lime on the fish and keeping it simple than doing this combo. Not a keeper and I won't make it again.

Salmon with Creamy Dill Sauce

Reviewed: Apr. 22, 2010
This recipe is elegant and simple. It is absolutely delicious. It is now the crowning centerpiece of my annual Holiday Brunch. Every time I make this, nothing is left over which is unfortunate because I never get enough of it for myself! You can't go wrong with this recipe.

Chuck's Favorite Mac and Cheese

Reviewed: Apr. 11, 2010
I thought this recipe was disappointing and bland. I was really looking forward to it because it sounded rich and interesting with the added cottage cheese and sour cream. Instead, what I discovered was the flavor immediately disappeared when these two ingredients were added. I added peas for added flavor and health since this isn't the healthiest recipe. Honestly, I don't understand why this is so highly rated given it's overall bland taste. I wouldn't make it again and will be throwing out the recipe after I'm finished writing this review. I think there are much better mac & cheese recipes out there. This one is definitely not a keeper.

Swordfish Calabrian Style

Reviewed: Sep. 17, 2009
I originally gave this recipe 3 stars, thinking that the fava beans were no good. My notes I made on the recipe said they were "yucky" tasting. I have since made it again and have decided that this entire recipe is "yucky." I used canellini beans and it was baaad. My family hates it. I hate it. I threw this recipe away. I won't waste my time with it again.

Favorite Old Fashioned Gingerbread

Reviewed: Dec. 24, 2008
Easy to make but somewhat bland. I like flavorful, robust food and am not afraid of a little spice. In keeping with other reviewer's suggestions, I added extra cinnamon and ginger plus added nutmeg. The end result is quite good but not the rich, zesty gingerbread I was hoping for. Also, I had no problem with the bake time. I checked it after 45 minutes but it wasn't done all the way so I baked it for the recommended hour and it came out fine. I might make this again because of how easy it is to prepare but I will keep searching for a recipe that yields the strong gingerbread flavor that I am looking for.
