Melting Snowmen OREO Cookie Balls

Looking at this picture gave me an idea to just use Vanilla ice cream instead and then freeze them. Simpler, but still fun. My kids won't eat cream cheese. We will see how it goes....

Shrimp, Broccoli, and Sun-dried Tomatoes Scampi with Angel Hair

Since i'm not a huge tomato fan, and wanted to keep the fat content down, I substituted sliced red green and yellow peppers. I also added some lemon juice and extra garlic. Cooked it in a wok also so some of the butter burned off and added a little white wine. A nice, light, quick recipe.

Slow Cooker Italian Chicken Alfredo

This was excellent. I used low fat soup and CC. Also, I don't like Mushrooms, so I substituted a cup of green peas instead and added some bacon bits to give it more of a Carbonara flavor. Even with all low fat ingredients and bacon bits instead of bacon, it still tasted amazing.

Sweet, Sticky and Spicy Chicken

Loved it. Very easy to make. The soy sauce is a little dominant if you dont make rice or a veggie to help soak it up, but all in all, really good. I read about using flour to help absord sauce, but since I just moved and had no flour in house, I breaded chicken VERY lightly and it was great. gave the chicken a general tso/sesame chicken type feel. Will definitely make again. easy and so quick.

Avocado, Tomato and Mango Salsa

Loved it. So easy, so good. I strained the diced tomatoes before i added other ingredients because they were very watery, but just a preference. And I personally would put in a little less cilantro next time. It was great but took over the flavor a LITTLE too much for my liking. But all in all, 5 stars!

Mozzarella and Tomato Appetizer

So easy, so good. Used tomatoes and basil right from garden, and put some italian dressing in container of mozz balls overnight. Only had longer wood skewers so did 2 tomatoes, 2 mozz balls on each. Big hit at party.

Coconut Shrimp I

Finally a good coconut shrimp recipe. Came out great. Used GUINNESS for the beer and it made the batter a little thicker which seemed to help the coconut stick a little better. Also gave it a nice flavor.

Pumpkin Peanut Soup

Pesto Chicken Florentine

This was very easy to make and tasted great. Definitely needs a whole bag of spinich and the heat to sautee the garlic needs to be lowered. Added some chopped onion with the chicken, and did it all in a wok becuase of the spinich. Will definitely make again.

Creamy Shrimp and Corn Soup

This was easy to make for a rookie like me and easy to get creative with. I sauteed 1/2 lb bay scallops with the onions and added the 1LB shrimp at the last minute since it was pre-cooked. I also threw in a small can of chopped clams, used 1/2 clam juice 1/2 chicken broth and some Old Bay to get more seafood taste. I used cream of broccoli instead of celerey because I'm not a celery fan. Used fat free heavy cream instead of milk and highly reccommend some cayenne pepper if you like a little kick. Thanks for the easy recipe! Made it twice in a week.
