Stuffed Green Peppers I
Because my boys are always bringing friends home to eat, I've had to stretch a recipe quite often. Just add a can of corn to your filling, and a little extra Worcestershire sauce. I've found over the years that when it is hot and I don't want to turn the oven on, I cut my peppers in half length wise, place them cut side down in a microwaveable casserole, with just a tiny bit of water. Microwave for about 2 minutes, covered, turn them over, fill with mixture, top with sauce and cheese, and cook in microwave for about 10 minutes. Quick and delicious.

Oven Pancakes
Wonderful! I made as directed, but added some thin sliced apples on top, and then sprinkled with a little more cinnamon and sugar. It tasted just like a local pancake house's specialty! A fraction of the cost, and we didn't have to go anywhere. Delicious and easy.

Tortellini Bacon Broccoli Salad
MADE AS DIRECTED. iT'S THE ONLY FAIR WAY FOR THE FIRST TIME. Hint for cooking bacon. Place a paper towel on a paper plate, lay about 6 or 7 strips of bacon on the paper towel, cover with another paper towel and microwave for about 3 minutes. Bacon will be crisp, no need to drain, and you can just break it up and throw away the messy paper plare and towels. Will try the mayo/sugar/vinegar dressing next time.
