Caramel Snack Mix

This is the easiest and most diversified recipe for fast gifts or parties.. have just made my 4th batch... you can use anything, I like to add pretzels..this last time it was chex cereal, small pretzels, (all I had}, & added raisins...looks delish.. no microwave but easy to melt on top of stove... one thing I figured out early on, you must stir as directed both in the oven & once out.. everyone I gave this to, loved it!! thanks

Too Cool For School Pumpkin Spice Cake

Great Hit! Made this to take to funeral, nothing left over. Only had 1/2C pumpkin left over from another recipe, used that & 1C. pumpkin pie filling. Didn't use much of the topping on bottom of cake, wanted to make sure I had enough for top. Came out so moist & beautiful looking.

Saltine Toffee Cookies

Easy & Delish! Used baking sheet covered with foil & my Silpat pad, clean up easy. Did make a few changes. Have a similar recipe using matzo. The saltines I had were in smaller pkgs, wasn't sure how much 4oz were so I just covered the entire sheet with them, added 1t. vanilla & pinch of sea salt once off stove, only needed 1 lg cup chips, after they melted & spread, sprinkled roasted walnut pcs & sea salt over the top. If you like sweet & salty this is amazing. This is going to be part of my Holiday Gifts.

Cranberry Streusel Pie

Made this pie today to take to holiday dinner party. Was a huge success, it wasn't too tart & served with whipped topping. Followed a lot of other reviews, added 1 granny smith apple, chopped it with cranberries in processor & instead of extra white sugar added 1/4C brown sugar, just enough..friends appreciated that it wasn't very sweet. will make sure to buy extra cranberries for freezer.

Habanero Pepper Jelly

Thanks, was looking for a recipe that would be good for holiday gifts for those who are looking for something with heat...got everything ready to make and found only had one pouch of liquid pectin. After much research I decided I would go with the powdered, used 8 TBS of the Ball brand that comes loose in a bottle, those who said they used powdered never said when they put it in. I decided I would use it like I do with other jam recipes & put it along with the carrots, both peppers and vinegar at the beginning, brought to a boil and cooked for 5 minutes. Added the sugar, brought back up to a rolling boil to cook for another minute then put in jars and water bath. It was thick when going into the jars. Got 6- 1/2 pint jars of very pretty jam. Think this will be a hit as it wasn't real hot eating but it sure leaves your mouth, or at least mine, tingling afterwards.
