Chicken Gravy Enchilada Casserole

Taste great just too soupy and that was with adding only 1/4c of water and the recipe recommended 1c. Added mozarella cheese, about 1/2c. Served with black bean and corn salsa, shredded lettuce and sour cream. Next time not as much chicken gravy.

Cola Pot Roast I

I've been making this recipe for years. Throw in prepackaged baby carrots and some pearl onions. Superb! I cook until it just falls apart. Serve over brown rice.

Asian Coleslaw

Very Good! I used a bag of pre sliced cole slaw it has all the different cabbages and carrots and green onions in it. Only takes about 15 minutes if that. Also those little bags of peanuts you get from Mickey D's with their sundae came in handy. One pack was enough. I also used red wine vinegar rather than rice vinegar.

Chocolate Peanut Butter Bars II

Make sure you add the graham cracker crumbs, it helps absorb some of the moisture. It is also very sweet, it is offset by the semi-sweet chocolate. I would use less sugar next time. Considering our oven is out of commission this was a great dessert recipe.

Slow Cooked Corned Beef for Sandwiches

Very Good! I used a 2lb corn beef, one spice packet, an entire 16 oz of beer (my husband got carried away)cooked for 3.5 hours. Was delicious and flavorful. I thought my husband had ruined it using all that beer but he didn't. Just a note: Neither of us like or drink beer.

Took less than 10 minutes. Truly wonderful. Thanks. A $1 mini bottle of rum from the liquor store worked out great. It was the only ingredient I didn't have on hand.

Lamb Chops with Balsamic Reduction

I bought Lamb Loin Chops. Very tasty, but have to admit expensive. Save for a special occation. $15.99/lb Ours were about 2 inches thick and we don't like undercooked meat. We prefer our food completely deceased (well done) So obviously 3.5 min per side wasn't enough. We finished in the stove at 350 for 5-6 minutes with foil on top to keep it juicy. I eventually raised the temp to 450, because I was cooking something else. Probably had them in there another 2 minutes, maybe. They came out tender and juicy and cooked through. The butcher suggested cooking under the broiler 5 min per side.

Easy Berry Parfait

We only used blueberries and raspberries. We mixed with the whip cream, didn't feel like using the mixer and having more cleanup. We also added cherry vanilla granola and a dollop of whip cream on top. The picture is the parfait my 9 year old designed. Need I say more? Easy and delicious!

Turned out great. More like a doughnut, but just barely sweet. I dusted with a little powder sugar. My husband used nutella. They were easy to make and a great little dessert. I halved the recipe I thought 120 was a bit much based on the original recipe. We made a total of 30. Will definitely make again.

Enchilada Stuffed Shells

Pretty bland. Added sliced jalapenos on top and served with the rest of the refried beans, since you'll have so much left over on the side along with sour cream and parmesan garlic bread on this site.

Korean BBQ Chicken Marinade

This was very easy and quick. I'm sure it would have tasted better if I had marinated for 4 hours, but I was hungry. I didn't let the mixture cool. i poured it on the chicken and poked it to death with a fork and let it sit for 15 minutes. Broiled it and it was delicious. The kids loved it.
