Dark Chocolate Cake I

Reviewed: Apr. 30, 2009
halved the recipe and made 7 jumbo cupcakes and 6 mini cupcakes. Shaved some dark chocolate and put on top of batter before baking. Mini cupcakes were done in 14 minutes, probably could have taken them out earlier like around 12 minutes. The Jumbo cupcakes were closer to 20 minutes. Delicious.

Cheese Drop Biscuits

Reviewed: Apr. 28, 2009
Was really good after some adjustments. I first halved the recipe to 6 servings. Added an additional TBSP of milk, additional 1/4 tsp of garlic salt added a an additional 1/4 cup of shredded mexican cheese. Brushed the tops of the biscuits with a combo of Garlic salt and melted unsalted butter. Made 8 nice size biscuits. Cooked 15 min exactly.

Easy Batter Fruit Cobbler

Reviewed: Apr. 24, 2009
Very Easy. The only thing I didn't like was that it takes so long to cook. I didn't have white granulated sugar so I used 1 1/6 cups of powdered sugar. Though,I did have a tbsp of white sugar to sprinkle on top.

Yummy Sweet Potato Casserole

Reviewed: Apr. 21, 2009
Really good. I don't regret cutting the sugar in half. I peeled and sliced two sweet potatos and boiled until tender. Then entire family enjoyed. The kids thought it was dessert.

Korean BBQ Chicken Marinade

Reviewed: Apr. 17, 2009
This was very easy and quick. I'm sure it would have tasted better if I had marinated for 4 hours, but I was hungry. I didn't let the mixture cool. i poured it on the chicken and poked it to death with a fork and let it sit for 15 minutes. Broiled it and it was delicious. The kids loved it.

Enchilada Stuffed Shells

Reviewed: Apr. 15, 2009
Pretty bland. Added sliced jalapenos on top and served with the rest of the refried beans, since you'll have so much left over on the side along with sour cream and parmesan garlic bread on this site.

Kneecaps

Reviewed: Apr. 15, 2009
Turned out great. More like a doughnut, but just barely sweet. I dusted with a little powder sugar. My husband used nutella. They were easy to make and a great little dessert. I halved the recipe I thought 120 was a bit much based on the original recipe. We made a total of 30. Will definitely make again.

Easy Berry Parfait

Reviewed: Apr. 14, 2009
We only used blueberries and raspberries. We mixed with the whip cream, didn't feel like using the mixer and having more cleanup. We also added cherry vanilla granola and a dollop of whip cream on top. The picture is the parfait my 9 year old designed. Need I say more? Easy and delicious!

Lamb Chops with Balsamic Reduction

Reviewed: Apr. 14, 2009
I bought Lamb Loin Chops. Very tasty, but have to admit expensive. Save for a special occation. $15.99/lb Ours were about 2 inches thick and we don't like undercooked meat. We prefer our food completely deceased (well done) So obviously 3.5 min per side wasn't enough. We finished in the stove at 350 for 5-6 minutes with foil on top to keep it juicy. I eventually raised the temp to 450, because I was cooking something else. Probably had them in there another 2 minutes, maybe. They came out tender and juicy and cooked through. The butcher suggested cooking under the broiler 5 min per side.

Took less than 10 minutes. Truly wonderful. Thanks. A $1 mini bottle of rum from the liquor store worked out great. It was the only ingredient I didn't have on hand.
