Simple Scones

Excellent! I skipped all the grating and kneading. I just threw everything into my Kitchen Aid, except egg and sour cream. Had it on low cycle until it resembled course crumbs. Add dried cherries, egg and sour cream. Mixed until all combined. I had to put it on high for a few seconds to make sure the egg was incorporated. Plopped it by the spoonful onto the cookie sheet. Delicious, none left, didn't even have time to take a picture. Oh so moist!!

Beer Batter for Fish

Pretty good. Took earlier advice and added more beer to 2 servings. Added tons of old Bay seasoning - probably 3 tbsp. wasn't overseasoned at all. Used a/p flour with xtra cornstarch. Cut up two mahi mahi fillets. Very tasty and still had batter left over. Cooked more like 6-7 minutes to get extra crispy crust.

Chewy Peanut Butter Chocolate Chip Cookies

I used another reviewers suggestion 1 1/4 c pb and 2 1/2 cup flour. Superb! I used wal-mart brand generic peanut butter it was great.

Fortune Cookies I

This was my first time. I took other reviewer's advice and reduced the sugar a little. I quatrupled the recipe. Came out pretty good. Since I kept switching baking sheets, as one cooked I started another, I could see a difference in quality. I sprayed the baking sheet with butter spray.My darker pan cooked them faster. My lighter pan a bit slower. I got to the point that I just kept them in the shape of a cookie, I had so many. Also the batter should be thin and when I poured the batter on the sheet I did it in a circular motion without touching the pan, this eliminated the need to tilt the pan to form a circle. All in all the kids liked them.

Marshmallow Fondant

Very Easy to make. I used my Kitchen Aid Mixer with the bread hook and let it do the work. I used other reviewers recommendation of spraying butter flavored pam in the bowl the marshmallows were to be melted in, the hook for my mixer and the mixing bowl. Cleanup was less than 5 minutes. It tasted great. We rolled it thin.

Blueberry Coffee Cake I

It wasn't the greatest, but wasn't bad either. The batter didn't seem like enough to make this coffee cake. The cake came out about 2 inches high in the bundt pan. Something wasn't right, but everyone in my family loved it.

Italian Spaghetti Sauce with Meatballs

Thought this was very good. We used ground turkey. I like my meatballs to be cooked through so this made 36 meatballs versus 12 and also we browned the meatballs in a cast iron skillet on the stove. After they were done we added to a jar of spaghetti sauce. Voila!

Grilled Cornish Game Hens

I just used olive oil, garlic salt, pepper, rosemary sprigs and garlic cloves. Turned out suprisingly good. To me the other ingredients weren't necessary. They weren't missed.

Cookie Dough for Ice Cream (Eggless)

Really good, a tad bit too sweet for my taste, but this is definitely a great recipe. No eggs!! Next time I'll sub the milk for water and add some chocolate chips.

Cranberry White Chocolate Shortbread

Didn't have enough flour, so we substituted wheat flour to make up the difference. Delicious! Didn't miss the white flour. I just don't know if I would use all wheat flour next time.

Leftover Chicken Croquettes

Used no parsley, I didn't have any. Sauteed diced onion and bell peppers in olive oil before adding to chicken/breadcrumb mixture. Husband made a nice sauce to go along. It was delicious. Kids love them two. They resembled crab cakes, too me. Will make again.

Meatball Grinders with a Yummy Sauce
