Chocolate Velvet Ice Cream

Reviewed: Sep. 27, 2012
made this ice cream last night, I may add thi is the first ice cream I've ever made. After watching Alton Brown's show "Good Eats" on You Tube I made a few minor changes. I added a pinch of salt, and 1 tablespoon of unflovored gelatin on top of 1/4 cup of the cold mixture (in a separte cup), then heated up 1/4 cup of the mixture in the microwave so that it was very warm and added to the gelatin mixture and stirred until mixed, then added the gelatin mixture back into the cold ice cream mixture before adding to the ice cream maker. I was hoping to eliminate any ice crystals from forming creating an icy ice cream as well as making it scoopable. This worked perfect, I am making a lemon sorbet today using the same method .I also added Scor pieces and pecans....awesome ice cream !

Mouse's Macaroni and Cheese

Reviewed: Jan. 29, 2012
excellenet, however I added rather than mustard powder 1 tablespoon dijon mustard and one heaping tablespoon mayo, along with one egg yolk (keeps it separated when heating up leftovers), and 1 tablespoon parsley to the sauce. Added 2 small onions minced and 1/2 lb crisp bacon and 1/3 cup green onions to the sauce as well. Awesome !

Dash's Donair

Reviewed: Nov. 22, 2011
I made the donair's last night, and made using the exact same ingredients, however next time I will reduce the salt to 1/2 -3/4 tsp. I also put all the spices in a grinder and ground to a powder ( used oregano flakes, whole pepper and red chilies), then added all the meat and spices in my blender and blended until very finely ground. I rolled in plastic wrap very tight , then placed on a broiler pan. After having it cool in the fridge for 1 hour, I used very sharp knife and sliced very thin. No need to keep overnight in the fridge before slicing. It turned out wonderfully!!!! For the sauce I used one can of sweetened condensed milk and 1/2 cup white vinegar, added 1 tsp of garlic powder. Thank you so much for sharing this, I will never pay again for a sub standard donair again
