Tomato Pork Loin Chops
YUM! A hit with both grown-ups and kids. I didn't pound the chops thin, left them thick, and they turned out soooo moist and flavorful. I also used diced tomatoes and tomato paste (I was out of tomato paste) as well as adding some thinly sliced red pepper (on hand and needed to be used). DEFINITELY making this many more times! (Served over egg noodles, might do rice next time?)

Cheesy Potato Salad
Yummmmmy! I made it with just a pinch of sugar, and it was so nice. A nice change of pace for a potato salad, and great with various grilled meats.

Cassie's Zucchini Brownies
Awesome! I added semi-sweet chocolate chips (about a cup I think) and they turned out soooo good. They were a little bit cakey, but that made them a little easier to send in school and work lunches. The best part was, nobody knew there was zucchini! My husband didn't even know until he happened to see a little piece of green in one bite.
