AMAZING, i only rated 3 instead of 5 because i made alot of changes based on others reviews, i did NOT steam the peppers because i prefer them crunchy, and im glad i didnt because they were slightly mushy slightly crunchy placing them in the pan raw and then baking them for 30 min, i also added corn and black beans to the mix and that was GREAT! i also used salsa instead of tomato sauce! also a great addition because it added chunks of tomatoes to the base! i also used a fresh red chili pepper from my garden instead of chili powder...i only had yellow and green peppers on hand and i preferred the yellow or use a more mild pepper like the red it call for, the green was just a little over powering (but im just not a fan of green peppers, my husband loved the green pepp), also i used some rice a roni mexican rice i had on hand and could bearly taste it in the mix i even added more than called for, will be trying other flavors and more than doubling the rice....the "stuffing mix" makes a ton so be prepared for extra, but as good as they were i will prob portion it up and freeze it for future peppers or taco filling!!
