Spicy Cranberry Chutney

This is a wonderful combo of piquant/sweet. Didn't have crystalized ginger; used about a teaspoon of pumpkin pie spice and 2 TBl. of balsamic vinegar. Reminds me of Autumn Chutney from Harry & David. If there is any leftover chutney; I'll be combining it with whipping cream to use as a sauce for pork tenderloin or chicken breasts served over wild rice. This is a gourmet meal in itself.

Surf and Turf - Gulf Coast Style

Didn't like this cooking method at all; either bacon was undercooked or fish was dry. I think it woould be much better baked in a foil pouch as another cook suggested.

Chicken Pasta - Shannon Style

Dinner was great. Leftovers were wonderful, reheated great. Added fresh tomato/parm cheese on reheating. Next time will try sauting chic without breading.

Asian Chicken Noodle Salad

Great entree! I mixed in ramen noodle/seed mixture after adding the dressing. I don't think this is a salad that keeps well until serving (do not make ahead and refrigerate). I think the salad needs to be assembled (all parts can be ready to go) at the last minute and served crisp. Crisp is really important in this salad; otherwise it is kind of old-salad bar.

Italian Pork Tenderloin

Served with noodles. Added portabello muchrooms and used Wondra Flour to thicken the sauce a bit. Going to try recipe using chicken breasts next time. Would make a good make-ahead company meal.

Chicken Chile Spaghetti

I covered this while baking, because pasts seemed to be drying out. sauce could have beeen thicker, flavor had just enough spice. Was better the next day.

Chicken Pot Pie II

This is what a real pot pie should taste like. I subbed cut up rotisserie chicken, puff pastry for the crust, and added diced par-cooked potatoes. I would disagree with reviewers who subbed/added creamed canned soups to the sauce. The sauce is what makes this pot pie authentic. Absolutely the best comfort dish we've had all winter!

Asian Fire Meat

Meat was very tender; but way too salty (and I love salt). Next time I will reduce the soy sauce and sub with white wine or perhaps rice vinegar and add more red pepper.

Pot Stickers Traditional

I added a bit of red pepper flakes to the filling. A bit confused on step 4; stir constantly after adding pot stickers? I just added pot stickers to heated oil, browned the bottoms, added the water, COVERED, and simmered for about 10 minutes. Did not add additional oil.

Nuevo Cubano Chicken with Lindsay® Spanish Olive Picadillo Salsa

I think this needs a little cilantro and/or lime juice to make make it a bit more "piquant." I love the combination of the olives, raisins, and capers. don't skimp on on substitute the jerk seasoning.

Easy Shepherd's Pie with Garlic Romano Potatoes

Way beyong the 10 minute cooking time for the potatoes, even though I peeled and quartered mine. Now after rereading the recipe I'm assuming the skins are left on and the potatoes are the little baby reds. I think the potato directions are sketchy (particularly for a novice cook). If you are on any kind of dinner schedule, you need to adjust your timetable accordingly.

Justin's Hoosier Daddy Chili

Had reservations about chili made with tomato soup (this just seemed wrong to me) and chicken broth. Trust Justin's daddy; I followed the recipe, but added 2 cans of black beans and a bit more chili powder. Great consistency (I think it's the soup) and just a bit spicy. At out chili cook-off, beat Fusion Chili and Quick Chili I (the defending champion).

Amazing Pork Tenderloin in the Slow Cooker

Reduce soy sauce, add potato to absorb saltiness:I (who an the world's biggest salt snack lover) thought this was extremely salty. On the other hand, saved the left-over pork (without sauce) and used it for sandwiches, which were great.

White Chocolate and Cranberry Cookies

These cookies missed it; maybe they are missing salt. I used Cherrylands' Best Dried Cherry Berry Mix (cherries, cranberries,and blueberries.) $10 for 2 pounds. I would use the tried and true Nestle Toll House recipe on the bag and sub white chocolate and dried fruit for the chocolate chips.

Cabbage Roll Casserole

Daria's Slow Cooker Beef Stroganoff

Added fresh baby bella mshrooms at the end and about 2 TBL tomato sauce (to add color) and used more meat than the receipe called for. With a spectacular salad and crusty bread, this makes a great company meal.

Chili II

I added fresh cilantro to the recipe. Had a blind taste-test with family and friends chili competition with Quick Chili 1, Fusion Chili, and Chili by George, Chili II won. Try it, you'll like it!
