Quick and Easy Tuna Casserole

I made this for supper last night and wasn't sure how it would go over. My usually picky 7 year old *loved* it. I think it was the first time ever that he was done eating before us. He had more for a bedtime snack, and he asked me to send it in his lunch today! My partner and I thought it was good. Better than tuna helper for sure, and an easy, quick meal with ingredients I usually have on hand. I used someone else's suggestion and put it in a greased casserole dish, topped with cracker crumbs/melted butter and popped it in the oven for 20 minutes at 350. I also sauteed the onions while the noodles cooked.

Chicken Biscuit Pie

This has become a favorite in my house. I always double the recipe and use a 9 X 13 dish. Sometimes I mix up the vegetables a bit and use something different. I almost never have leftover chicken so I just cook some frozen boneless skinless chicken breasts in a mixture of chicken broth, water, celery, onion, carrot, garlic, and whatever else I feel like throwing in. After the chicken is cooked I use that liquid in the gravy part of this recipe. For the biscuits I use half butter, half olive oil (as another reviewer suggested), mix some summer savoury in with the dry ingredients, and cut out biscuits instead of dropping the dough by spoonfuls on top. I usually make this at least once a week. I'm getting hungry just writing about it, lol.

Bread Machine Rolls

Yum. I doubled this recipe and it lifted the lid of my breadmaker while it was rising, but everything turned out fine. Baked them in 9X13 pans (high sided) and kept the dough kind of close together so they had a nice shape with soft sides. Taste *just* like my grandmother's rolls, and I'm thousands of miles away from my family so I'll be making these often! (I didn't use the egg wash - just brushed them with a little melted butter after they came out of the oven)

Butter Cream Frosting II

Great! I didn't have any shortening, so I used half margarine, half butter. Used the full five cups of sugar and it's pretty sweet, but not unbearable. Great texture. Mmmmmm.....
