Tiramisu Layer Cake

I used two cake mixes to make three oversize 9 inch rounds. Then I followed the recipe as written and let it "age" in the 'fridge for two days before our get-together. YUMMY! Even non-cake eaters gave this dessert reave reviews!

Creamy Banana Bread

My husband says this rivals his mother's recipe (one that uses mayonnaise to keep it moist), and I tend to agree. For a fuller flavor I subbed 1 cup white flour, 1 cup whole wheat, and 1/4 cup flax for the stated amount of flour. Also, I poured the whole batter into one 5x9 pan instead of two 4x8s, and it turned out great with just a bit more time and a slightly lower temp than the recipe stated. (I always have issues turning quick bread out of pans, so I put parchment on the bottom of the pan then greased the sides, and it turned out nicely).

Grain and Nut Whole Wheat Pancakes

I added an extra egg, and because I didn't have buttermilk, I used milk and added a splash of vinegar. Instead of the suggested chopped walnuts, I added a few tablespoons of ground flax. THESE WERE AMAZING! (Next time I'll pour smaller pancakes, as the plate-size ones I did this time were difficult to flip).

Bread Machine Spelt Bread

SUPER light and fluffy. I added 3 teaspoons Vital Wheat Gluten and increased Lecithin to 1 teaspoon. Additionally, I allowed the yeast to soak in 1 cup of 100 degree water for 10 minutes before beginning the machine... I will be making this recipe again! (It came out perfectly on "Basic" setting for 1 1/2 pound loaf).

Sausage Barley Soup

AMAZING flavor! I used an entire onion, two carrots, and a full cup of hulless waxy barley. Because I used Hot Jimmy Dean sausage, I omitted the garlic and Italian seasoning. 4 hours in the crock pot was perfect. We like spice, and the Hot Jimmy Dean gave this soup the kick we were looking for.

Spinach Cheese Ball

Wonderful recipe! And SO easy--I just dumped the ingredients into my food processor, and it was mixed in a flash! My husband won't eat mayonnaise, so I substituted sour cream. Additionally I added 1/4 c. white onion, as some of the reviewers said it was bland. Excellent flavor! Next time I'll try substituting a different soup mix or maybe even dry Ranch... Yummy!

Coconut Cake I

I made a half-batch of frosting, as I didn't split the layers of my cake. It was plenty for two layers, but it wouldn't stay on the cake even though I kept it in the fridge... The frosting puddled down the sides and pooled around the base of the cake, making for very poor presentation. I followed the directions, so I'm not sure what happened...

Two Bowl Cake

Even in greased rounds, this moist cake was difficult to remove. I ended up prying it out with a spatula and covering the broken parts with thick frosting. I omitted the cocoa, following another reviewer's advice and substituted it with cornstarch. I SHOULD have added more than the 1 T vanilla that the recipe called for because the flavor was rather uninspired. (But this was my fault and not the original recipe's). Using all-purpose white flour, the top of one of my rounds fell, and both of them peaked quite dramatically using the temp the recipe called for. Super moist cake, but a bit too dense for my taste.
