This recipe ROCKS! I kept thinking as I was browning little pieces of meat, that this had better be worth it!! Then I was also thinking that I'd add cumin & garlic towards the end of cooking... but it smelled and looked soooo good that I didn't want to risk ruining it (and I add cumin to EVERYTHING) I just made it as is and I will never make it any other way. My husband LOVED this! Thanks so much for an awesome recipe!!!

Chicken Enchiladas V

Lightened this up and LOVED it! As others suggested, I used taco seasoning instead of chili powder and I added green enchilada sauce to the sour cream & soup. How I lightened it up! I used extra lean turkey breast instead of chicken... fat free cream of chicken soup, light sour cream, reduced fat shredded Mexican cheese and carb balance flour tortillas. Think it came in under par with all those light changes? No way!! Full fabulous flavor... half the calories, fat and carbs! Enjoy!!

Mexican Wedding Cakes II

I usually make these every year at Christmas (and whenever my mom requests them, they are her favorite!) But tonight my daughter told me she needed cookie for her Dia de los Muertos celebration in her Spanish class tomorrow. So I decided, these are Mexican, I'll make them... then to make them for Day of the Dead, I made them skull shaped and decorated them with flowery shapes & other confections before baking. Instead of rolling in powdered sugar, I sprinkled them... the sugar covered a lot of the decorations, so I cleared the sugar from just the decorations with a toothpick dipped in water.

Hash Brown Quiche

I changed this a bit to lighten it up. Instead of butter, I sprayed the pie plate with butter flavored cooking spray, then pressed the hash browns into it and sprayed again and baked. I change the ham to canadian bacon and used reduced fat cheese (not fat free) I also used 2 whole eggs & 3 servings of EggBeaters. It was great!!! Super tasty and didn't taste or feel 'lightened up'. Definitely a keeper! Everyone loved it!

Authentic Huevos Rancheros

I make this at home often. It's very good. Different flavor salsas are fun to experiment with too. (and I also use fat free re-fried beans... they taste great)

Garlicky Baked Butternut Squash

I LOVED this! I replaced the parsley with rosemary to accompany the chicken I was baking... I reduced the olive oil to 1 TBLS to cut back on the fat. I don't care for sweetened squash and this was savory and delicious. I will definitely be making this again. And I'm emailing the recipe to my mom just as soon as I'm done typing! She'll love it too!

Gyros Burgers

Yum! Great gyro flavor. I added 1/2 tsp Penzey's Greek Seasoning. I made the patties oblong shaped and served them in warm flat bread with tzatziki sauce from this site, with diced onions and lettuce. Everyone loved them!

I gave this 4 stars... I did add shredded cucumber, and cut back on the garlic... then the flavor was right on! Next time, I'll drain the yogurt... this wasn't 'too' runny... I just prefer it thicker.

Cakes In A Cone

This recipe is great! I make it often for my kids to take to school (I even take them to work) and they are ALWAYS a big hit! I frost them and decorate according to the occasion instead of using the chocolate chips. I always make them the night before and have never had them get soggy.

Everyone LOVES this recipe!! I double the hot sauce to 2 tsp of habanero sauce. Whenever I make it I always get asked for more! I need a bigger dehydrator to keep up with the demand! This is an AWESOME recipe!! Thanks for sharing =)

Chicken Marsala
