My cooking triumphs
Cooking for my parents! I made roasted and glazed cornish game hens, bacon brussel sprouts, mango chutney, spinach and walnut salad, cranberry rice pilaf, warm bacon dressing and a cinnamon swirl cheesecake. The meal was a huge hit!
My cooking tragedies
Chicken fried steak - I seem to have some trouble getting the steak done right with the breading.

Manda's Seven Layer Taco Dip
This is actually extremely delicious and well worth the effort. The issues are first, never use lettuce in layered dips because the lettuce wilts and makes the dip unpleasant. Next, mix the taco seasoning in with the beans instead of the sour cream and cream cheese. The reason is if the salsa and jalapenos are spicy then the sour cream with cream cheese mixture is the perfect opposite and adding the taco seasoning takes away from the slightly sour taste. If using chips or pork rinds, slice the tomatoes in thirds otherwise they will be too heavy. If eating this as a salad of sorts then leave the tomatoes in halves. I used yellow cherry tomatoes which was the perfect compliment to the sweet red onion and the heat. You can use whipped cream cheese at room temperature or heat it in the microwave for 30 seconds. Stirring with a spoon works just as good as a mixer. Very tasty!

Cranberry Salad III
Had to review this one! This is darn near delicious. I did use sugar free jello (.3 is the same as the 3oz regular) and left out the pecans but everything else as listed. Really glad I used sugar free because the cranberry sauce is already pretty sweet. The cream cheese, mayo and pineapple juice layer is the perfect foil to the gelatin not being too sweet or too tart. In smaller servings, somewhat diet friendly also. Definitely experiment with jello flavors!

Cherry Tomato Salad
Absolutely delicious and very diet friendly. Made this probably 12 times so far and everyone I shared it with also loved it. Definitely whisk in the olive oil a bit at a time! The olive oil is really good fats and makes for a great diet friendly side or even lunch. My whole family loved this (even the 12 year old). The only option I decided not to use was green olives because I don't like them. Everything else is as listed in the recipe.
