My cooking triumphs
Cooking for my parents! I made roasted and glazed cornish game hens, bacon brussel sprouts, mango chutney, spinach and walnut salad, cranberry rice pilaf, warm bacon dressing and a cinnamon swirl cheesecake. The meal was a huge hit!

Overnight Blueberry French Toast
I stopped posting reviews due to removals or edits that did not seem accurate however, I had to post something about this recipe. This is darn near awesome! The only changes I made was to use Italian bread, thawed frozen blueberries, extra cinnamon and I heated the cream cheese up in the microwave with a little vanilla then poured it on the middle layer of bread. I did not follow other reviewers by mixing the cream cheese with confectioner's sugar because that is the start of cream cheese frosting and I did not want this to be teeth hurting kind of sweet. The blueberry sauce is already pretty sweet as it is and pouring it over the bread mixture makes it just perfect. This could also be called Blueberry Bread Pudding though perhaps not as breakfast friendly. As a whole, this was super delicious and a huge hit. Husband loved this and lived on leftovers the whole weekend. I highly suggest heating the cream cheese up for easy pouring (no need to spread) and make the blueberry sauce as listed because it is really good. The bread I used was only slightly stale (same day baked) and still turned out fantastic.

Asian Lettuce Wraps
I loved this recipe and followed it almost 100%. The only differences I made were to use ground turkey and added a little more Hoisin. My local market has butter lettuce in the "still alive" packaging so the leaves were perfect. Eating is a little messy but very tasty and fun. This can be as healthy or filling as you want so be creative. I'm on a pretty strict diet and this was perfect for weekend lunch. No need to switch up the sauce!

Easy Chicken Taquitos
First of all, these were quite tasty and yes, very easy. The issue I have with this recipe is using canned chicken. The other issue is the lack of proper seasoning. To keep this easy, I picked up a just cooked rotisserie chicken at the market, then shred the chicken by hand. For seasoning, I used a packet of taco seasoning, about a half cup of hot salsa and a tablespoon of cream cheese (I promise, super yummy combination). I used Mission corn tortillas, which are very soft and flexible so rolling these was easy without having to warm them first. The biggest issue I had was only one side of the taquito gets somewhat crispy so they needed to be flipped then put back in the oven. Also, the tortillas kind of cracked a little which may be the brand I used? Regardless, they did taste pretty great and hubby liked them too. These would be a fun "pot luck" kind of meal to bring to work or other party like events.
