My cooking triumphs
Cooking for my parents! I made roasted and glazed cornish game hens, bacon brussel sprouts, mango chutney, spinach and walnut salad, cranberry rice pilaf, warm bacon dressing and a cinnamon swirl cheesecake. The meal was a huge hit!
My cooking tragedies
Chicken fried steak - I seem to have some trouble getting the steak done right with the breading.

Baked Pancakes
Loved this! Doubled the recipe and made this 100% diet friendly using CarbQuick for flour, 1/4 cup of Splenda, 1/8 cup of Erythritol, heavy cream and added cinnamon. I did not use the lemon or confectioner's sugar although I will try it next time using Swerve for the sugar to make it diet friendly. This is delicious with sugar free, carb free maple syrup and butter or butter substitute. I added a little peanut butter to one serving to taste and it was also fantastic. Super easy!

Johnsonville Sausage Balls
This turned out pretty tasty! The recipe as it stands is good however I decided to do some adjusting to make it diet friendly for us low carb-ers. First for those that didn't know, baking mix is something like Bisquick so I made baking mix by using Carbquick flour, baking powder, salt and shortening then used heavy cream instead of milk. I also doubled the recipe and used two chubs of hot sausage. I browned the sausage as listed then mixed everything in a large bowl along with some additional onion powder and cayenne pepper for extra spicy. I did not add any mushrooms because I forgot them at the store but they weren't missed at all. The balls turned into lovely sausage biscuits that were slightly spicy and slightly moist. Perfect for on-the-go or as a side for a nice breakfast. Making them like this means low carb and great for diets. Highly recommended!

Best Chocolate Chip Cookies
These are awesome! Decided to make these 100% diet friendly so I used Carbquick as flour for low carb, Splenda as the white sugar with another 1/2 cup Erythritol and Just Like Sugar brown. I did use another reviewers suggestion and increased the brown to 1 1/2 while decreasing the white. I also used sugar free Hershey's chocolate chips in one batch and ChocoPerfection chocolate in another. The ChocoPerfection is quite expensive though does make delicious chips by smashing frozen bars. The Hershey's is just as good with minimal blood sugar impact. Since hubby and I are diet watching, he begs me to make these every weekend and will indulge almost every day. I do cook these at 350 for about 14 minutes which is probably due to the low carb flour. Awesome!
