Slow-Cooker Pepper Steak

I can't think of a single reason NOT to give this 5 stars. It is a little different than traditional pepper steak due to the tomatoes and also because the soy flavor wasn't as prevalent. I much preferred this sauce because it was thin rather than the gloppy cornstarch sauces that usually accompany oriental fare. I had plenty of extra sauce to spoon over rice.

Minted Salmon

This made the most succulent salmon I've had in a while. I used wild caught sockeye and marinated for about 3 hours before cooking on the grill. I was concerned that the mint might be overwhelming, but it just tasted herbal. This took quite a bit longer to grill than the recipe indicated, and I did not pull it off until it was looking a little overcooked (it was wonderfully moist and delicious). I did skip the brushing with butter - that would have added uneeded extra calories.

Pork Chops with Blue Cheese Gravy

Extremely easy, extremely good. Quick enough for weeknight dinners. Make sure you have some rice or pasta so none of that delicious sauce goes to waste.

Curry Kale and Potato Galette

This was a pain in the neck to make but was absolutely delicious. My husband complained I made a healthy food unhealthy with the addition of potatoes and cheese, but he seeemed to have no better luck than me at leaving the table! I would reccomend using a large non stick Dutch oven. I used a stainless saute pan and had to keep waiting for the kale to decrease in volume before I could add more. I was afraid all the spices were stuck to the bottom of the pan and there would be no spices left for the kale, but this was loaded with flavor and truely unique.

Parmesan Sage Pork Chops

These pork chops were excellent. The lemon zest and sage really made these special. I did use freshly grated parmesan rather than the canned cheese. My chops could have used a couple of hits with the meat mallet as they were a touch tough. The bread crumb mixture could be cut in half. I did pile on some of the leftover crumb mixture atop the chops before I put them in the oven as the freshly grated parmesan wasn't sticking to the chops. Sooo good with the toasted cheese!

Quinoa and Black Bean Chili

This is such a hearty chili, you won't miss the meat. I top it with a dollop of fat free sour cream and serve with a salad. This recipe does make a lot, but you'll have lunch for the remainder of the week.

Creamy Mocha Frozen Dessert

Excellent! I did have a little trouble getting this dessert out of the dish - -next time I will spray the dish with Pam. I did double the crust ingredients as suggested. I used espresso powder instead of instant coffee for more coffee flavor. I used light cream cheese and light cool whip and this was still good,good, good!

Pollo (Chicken) Fricassee from Puerto Rico

This is delicious and different but pretty salty. The first time I made this with the salt, but I omitted when I made this again. Unfortunatly, I still thought this was a bit too salty. The next time I make this, I will have to cut back on the Adobo seasoning. I did skip the Sazon seasoning as this is bascially MSG. I also replaced the chicken legs with a large tray of chicken tenders.

Flavorful Flounder

Very, very good. I omitted the green onions as I had none, but did sprinkle with onion powder. My husband added Old Bay to his fish before I popped this in the oven. We both thought this was delicious, even on frozen whiting from the grocery store.

Fennel Pork Chops

This recipe has become a staple in my household. This is the best and easiest recipe I have found on line to date. I don't know why so many reviewers found this so salty; I just sprinkle each chop with the garlic salt - I don't pay any attention to the measurement called for in the recipe. Also I do not use cooking wine which does contain salt. The little bit of liquid left after cooking is perfect for spooning over the pork chops just before saving. Thanks for this wonderful recipe Jessie. I have probably been making this twice a month for 2 years now.

Grandma's Gingersnap Cookies

I made these thinking I wouldn't be as prone to over indulging as I usually do with chocolate chip - WRONG!! These really were delicious, especially warm from the oven. I did flatten the cookies with the bottom of a glass and added the teaspoon of cloves as recommended by a previous reviewer. The only complaint I heard was my kids - they thought they smelled like a candle!

Martha's Hot Almond Spread

Excellent flavor but sets very quickly as it cools. This needs to be kept over a heat source so that you can spread it. You may want to toast the almonds in the microwave before hand as I did not find the cooking time long enough to properly toast the nuts.

Vini's Pork Roast

This was really succulent. I did make the gravy but because there were so little pan drippings, the gravy was kind of lame. The pork truly did not need the gravy, and even obscured the wonderful flavor of the rub. I did cut the salt back to a tsp - it was still a touch salty.

Ham and Wild Rice Quiche

I haven't met too many quiches I didn't like but I thought this was a little better than most, I think, due to the sour cream. My husband had to ask if there were eggs in it. I could not find wild rice so ended up using another whole grain, dark colored rice called Forbidden Rice. I'm really not sure the rice added anything to the dish so you could easily substitute a chopped vegetable.
