Leftover Ham Compote

I used dried apricots and apple cider. I added the cider before cooking as I didn't read the recipe carefully enough. My husband really liked this and he usually complains about having fruit in his meat. I also thought this was a fairly healthy dinner as it didn't contain alot of processed ingredients.

Mom's Pineapple-Carrot Cake

This was very good - it had a tasty, crunchy, crusty exterior and moist interior. The directions didn't specify whether the beating should be done by mixer or hand, so I beat by hand which probably accounted for the homey, coarse texture (which I prefer). I think this cake could be improved by a combination of spices as an earlier reviewer had suggested,and I did cook it an additional 10 minutes - it looked a little jiggley although the knife came out clean. I had half a block of leftover cream cheese in the fridge, so I beat that with the pineapple juice and then added the 10X sugar. I spooned that over the cake and topped with additional walnuts. I took the cake to work for a bake sale, and had several comments on the beautiful appearance of the cake and 2 requests for the recipe. I will definitely make this again, as I love Bundt cakes for their ease of frosting.

Texas Curried Chicken

I loved the sauce (I'm a big curry fan)so I think this would be more enjoyable with tenders where you can really taste the sauce with every bite.

Fennel Pork Chops

This recipe has become a staple in my household. This is the best and easiest recipe I have found on line to date. I don't know why so many reviewers found this so salty; I just sprinkle each chop with the garlic salt - I don't pay any attention to the measurement called for in the recipe. Also I do not use cooking wine which does contain salt. The little bit of liquid left after cooking is perfect for spooning over the pork chops just before saving. Thanks for this wonderful recipe Jessie. I have probably been making this twice a month for 2 years now.

Pineapple Enchiladas

I wish I had read the reviews before making this as the pineapple definitely needs to be drained. While I enjoyed these very much, some additional sour cream and green chiles would have made these even better.

Grandma's Gingersnap Cookies

I made these thinking I wouldn't be as prone to over indulging as I usually do with chocolate chip - WRONG!! These really were delicious, especially warm from the oven. I did flatten the cookies with the bottom of a glass and added the teaspoon of cloves as recommended by a previous reviewer. The only complaint I heard was my kids - they thought they smelled like a candle!

Coffee Praline Muffins

Although some reviewers thought this had too much coffee flavor, I substituted espresso powder for the instant coffee and I still didn't think the coffee flavor was very pronounced. The only thing that gave these muffins any flavor at all was the pecans.

Pork Chops with Fresh Tomato, Onion, Garlic, and Feta

This was very tasty!! I was looking for a recipe to use up some leftover feta, and this one appealed to me because it didn't call for a lot of "processed" ingredients. This really was very simple - the only prep required was on the onion and tomatoes. I did follow the advice of an earlier reviewer who suggested braising the onion and chops in chicken broth - I didn't want to overbrown the chops while trying to cook the center. If you are going to use the broth, you may want to omit salting the chops before browing as mine were a little on the salty side.

Slow Cooker Wieners in Wiener BBQ Sauce

I made these for a party of teenage girls who shunned them for the frozen chicken tenders. What a shame - they were actually pretty good for hotdogs. I used the little smokies. I liked the fact that the recipe used mustard rather than the traditional ketchup or chili sauce.

Mini Upside Down Pineapple Cakes

I'm not sure what a 3" muffin pan is but I used a standard muffin pan and this did not work. I ended up cutting out a quarter of the pineapple slice (and probably should have cut out more. I tried dumping the first tin onto a piece of wax paper, but the muffins went everywhere and the pinepapples went elsewhere. I quickly put them back together as I was making them for a work birthday, but the brown sugar mixture was left behind on the wax paper. When the second tin came out of the oven, I carefully scooped each cake out with a spoon, but the liquified brown sugar was left behind in the tin. The cakes tasted fine and were actually kind of pretty in a lopsided way, but I wouldn't attempt this again unless I substituted crushed pineapple.

Blackberry Wine Cake II

This actually was very good but the smell turned me off. Not being able to find blackberry jello, I used grape. It was okay, but the next time someone leaves me some blackberry wine, I'll try lemon jello.

Rosemary Sherry Pork Chops

I used about 1 tbs of olive oil and omitted the salt. I would have added salt at the table if it were needed but I didn't think it was. Unfortunately, my chops were a little tough but the onions were excellent.

Mexican Casserole

I love anything Mexican so I thorougly enjoyed this, but it wasn't anything out of the ordinary. This was VERY simple to assemble the night before. I had my kids take it out of the fridge to warm up, husband popped it in the oven, and I went to the gym. I followed other's tips and cut the cheese in half for health reasons - it was plenty cheesey without the extra 2 cups.

Slow-Cooker Pepper Steak

I can't think of a single reason NOT to give this 5 stars. It is a little different than traditional pepper steak due to the tomatoes and also because the soy flavor wasn't as prevalent. I much preferred this sauce because it was thin rather than the gloppy cornstarch sauces that usually accompany oriental fare. I had plenty of extra sauce to spoon over rice.

Thai Pineapple Chicken Curry

While this was very good, the smell of that fish sauce was strong!! I'd either have to leave this ingredient out in the future or at least cut it down to 1 tsp. Next time I would use the whole red pepper, green pepper and onion instead of half. I also used 2 packages of boneless chicken breasts instead of 1 because it seemed like there would be so much extra sauce (there was plenty of sauce). Now if I could only get rid of that fish sauce smell!

Cranberry Brisket

My very picky eater daughter asked me to make this on a weekly basis (she must not have realized there was a can of whole cranberry sauce in it!) While I didn't think it was as wonderful as she thought, it was extremely easy as well as tasty. Ideally, I wouldn't want this in the crockpot any more than 6 hours on low as the sauce really starts to burn.
