Corny Ham and Potato Scallop

I think this may have worked better as a casserole. I put this on low for 8 hrs. My husband stopped in at lunch and added water as there was very little liquid. By the end of the 8 hrs, the mixture was brown. It was okay tasting, but not at all cheesey.

Mediterranean Marinated Chicken

I am really surprised by all the glowing reviews because I didn't care for this at all. It was too oily and the lemon pepper seasoning was all I could taste. The sun dried tomotoes all fell off into the barbecue grates. Someone suggested using lemon oil in place of the lemon pepper seasoning - I think that would really help, but I won't try this again.

Sicilian Lemon Chicken with Raisin-Tomato Sauce

I wasn't too sure about the combination of tomatoes and raisins but this really was very good. My only complaint was that their was very little liquid in the sauce to keep the chicken moist. If I were to make this again, I would not drain the tomatoes and possibly add some additional liquid.

Sour Cream Chicken and Potatoes

Lots of prep and clean up does not fit my definition of easy and I wouldn't bother with this again on a week night. On the upside, I liked all the fresh ingredients. I did double the potatoes but could have quadrupled as their really wasn't alot of potatoes for the amount of meat. I do not own a food processor and did have problems with the spinach and sundried tomatoes in the blender. I will have to find another way to make this mixture as ideally I would have added alot more spinach and a couple more tomatoes. My husband thought this recipe was fantastic.

This was very pleasant but I think the only reason I noticed the anise and mint flavoring was because I knew it was in there. Maybe more anise and fresh mint would have made for a more noticable flavor? I also didn't think the lemon peel was enough to flavor the butter - you will probably need to add a little juice.

Sage Roasted Pork Tenderloin and Beans

By the time my pork was done, my beans had no liquid left to them. I also thought the garlic slivers detracted rather than enhanced the pork's flavor. If I tried this again, I would brown the pork with garlic and keep a better eye on the beans, adding broth as necessary.

Red Beans and Rice

Pretty good taste but I wasn't sure I understood the recipe - I used an ENTIRE 14 oz box of Sucess rice and thought that was too much. 3 bags would have been plenty. I also used only 8 oz of cheddar due to the fat factor. I really couldn't taste the beef in this at all - I don't know whether to add more beef or leave it out altogether next time. At any rate, this was quickly consumed by my teenaged boy.

Cranberry Brisket

My very picky eater daughter asked me to make this on a weekly basis (she must not have realized there was a can of whole cranberry sauce in it!) While I didn't think it was as wonderful as she thought, it was extremely easy as well as tasty. Ideally, I wouldn't want this in the crockpot any more than 6 hours on low as the sauce really starts to burn.

Thai Pineapple Chicken Curry

While this was very good, the smell of that fish sauce was strong!! I'd either have to leave this ingredient out in the future or at least cut it down to 1 tsp. Next time I would use the whole red pepper, green pepper and onion instead of half. I also used 2 packages of boneless chicken breasts instead of 1 because it seemed like there would be so much extra sauce (there was plenty of sauce). Now if I could only get rid of that fish sauce smell!

Slow Cooker Pepper Steak

I can't think of a single reason NOT to give this 5 stars. It is a little different than traditional pepper steak due to the tomatoes and also because the soy flavor wasn't as prevalent. I much preferred this sauce because it was thin rather than the gloppy cornstarch sauces that usually accompany oriental fare. I had plenty of extra sauce to spoon over rice.

Mexican Casserole

I love anything Mexican so I thorougly enjoyed this, but it wasn't anything out of the ordinary. This was VERY simple to assemble the night before. I had my kids take it out of the fridge to warm up, husband popped it in the oven, and I went to the gym. I followed other's tips and cut the cheese in half for health reasons - it was plenty cheesey without the extra 2 cups.

Rosemary Sherry Pork Chops

I used about 1 tbs of olive oil and omitted the salt. I would have added salt at the table if it were needed but I didn't think it was. Unfortunately, my chops were a little tough but the onions were excellent.

Blackberry Wine Cake II

This actually was very good but the smell turned me off. Not being able to find blackberry jello, I used grape. It was okay, but the next time someone leaves me some blackberry wine, I'll try lemon jello.
