Roasted Potatoes with Tomatoes, Basil, and Garlic

This was disappointing. I thought with all that fresh basil and tomatoes, this should been superb, but even the addition of parmesan wasn't much help.

Marinated Turkey Breast

Other than the cloves, this was pretty ordinary. The meat in the vicinity of the cloves was definitely tastier that the rest.

Chicken A La Yummy

This was surprisingly good. I marinated overnight and cooked on the grill. The chicken really picked up the flavor of the marinade.

Mediterranean Salmon

This was a strange combination of flavors, and the cilantro really overpowered the basil. There are way too many salmon recipes out there to repeat this one.

Spicy Squash Casserole

The reviews on this seemed to be really mixed depending on how you spiced up this very unspicy recipe. I took the opportunity to get rid of some Sazon Goya seasoning that I don't remember why I bought in the first place. My husband commented several times on how good it was. I wasn't crazy about the cracker crumbs, next time I would just use bread crumbs.

Chicken Honey Mustard Pie

This was good but needed more filling for all that crust. I used 3 large chicken breasts. Next time I think I would add more veggies - maybe some celery, red pepper and mushrooms. You could add another breast, but it did seem to have plenty of meat. I don't think I'd name this honey mustard as those flavors were overpowered by the soy sauce - I think I might try cutting the soy sauce in half in hopes the honey mustard flavor would be more noticable.

E-Z Reese's® Layer Bars

I usually don't bother trying recipes with less that 4 stars, but how could a recipe with all these good ingredients be bad? I liked these quite a bit, but truthfully prefer plain scratch brownies. I reduced the butter in the brownie layer from 2 sticks to 1 1/2. The brownie layer was exceptionally good so you could probably reduce the butter down even more. I ran out of oatmeal for the cookie layer and made up the difference with a combination of whole wheat flour and toasted wheat germ. With all the PB chips, you couldn't tell oats from wheat germ anyway. There was a lot more cookie layer that brownie layer - I think I would have preferred the layers to be a little more equal.

Zucchini and Potato Bake

Not as fabulous as the reviews indicated, but a nice accompaniment to a plain grilled meat. I did add the parmesan as so many recommended but really couldn't taste it. I also used Italian style bread crumbs - this would have really been bland without.

Hi-Protein Energy Bars

I really wasn't expecting much from this recipe, but these bars were surpisingly good. They were much like brownies, just a little crumblier. I was amazed at how much chocolate taste came from such a small amount of cocoa!I think I'd cut back on the peanut butter chips and increase the raisins as I barely noticed the raisins in the bars. The only thing I didn't like was the dried milk - you just can't hide the taste of that stuff.

Asian Salmon

This was very good, but I am beginning to wonder whether marinating salmon is the best way to prepare it. It seems that no matter how long it sits in the marinade, it does not absorb the flavors the way other meats do. At any rate, this cooked perfectly in the prescribed time, but I would recommend cutting the olive oil in half as the marinade seemed a touch oily.

Creamy Mocha Frozen Dessert

Excellent! I did have a little trouble getting this dessert out of the dish - -next time I will spray the dish with Pam. I did double the crust ingredients as suggested. I used espresso powder instead of instant coffee for more coffee flavor. I used light cream cheese and light cool whip and this was still good,good, good!

Chicken Milano

I've given this only 4 stars for 2 reasons. First, I subbed fat free half and half in the sauce to eliminate a lot of the fat. The sauce was still very good, just maybe not 5 star good. The second reason was that this recipe was time consuming not only in the preparation, but what a lot of dirty pots and dishes to clean up after!

Lightly Sauced Linguine and Chicken

I used cream cheese (I have no access to marscapone) and the sauce was anything but light. I did add an additional 1/4 c liquid, but it was still one big clump of noodles that you needed a knife to separate into individual servings. My husband thought this was exceptionally good - I thought it just tasted okay. I added a can of diced tomatoes to the leftovers for both taste and nutritional value, but still wasn't wild about this. I think some fresh basil or other Italian herbs may have helped.

Cheesy Sausage Zucchini Casserole

I followed the suggestions from several other reviews and doubled the rice, but decided the original specified quantity would have been plenty. With the additional rice, there was more starch than vegetables, and that's not the direction I am trying to go in. Used fresh mushrooms and canned tomatoes. I did use velveeta slices to top off the casserole - next time I will use cheddar.

Vini's Pork Roast

This was really succulent. I did make the gravy but because there were so little pan drippings, the gravy was kind of lame. The pork truly did not need the gravy, and even obscured the wonderful flavor of the rub. I did cut the salt back to a tsp - it was still a touch salty.

Ham and Wild Rice Quiche

I haven't met too many quiches I didn't like but I thought this was a little better than most, I think, due to the sour cream. My husband had to ask if there were eggs in it. I could not find wild rice so ended up using another whole grain, dark colored rice called Forbidden Rice. I'm really not sure the rice added anything to the dish so you could easily substitute a chopped vegetable.

Jamie's Cranberry Spinach Salad

This was fantastic! It was loaded with almonds and dried cranberries so you could easily cut back on these items by half. In the future I would toast the almonds in the microwave to help eliminate some of the fat. I also would have thrown in some blue cheese crumbles if I had any - not that it needed it.
