Cream Cheese Coffee Cake

My very picky daughter loved this but I thought it had several problems. The baking time was way off - I really don't know how long I ended up cooking it, and it still was a little underdone. The cake was dense and heavy, just a touch shy of gummy. The filling was really tart, and, for a second, I thought I forgot to add the confectioners sugar. The only sweetness to this cake came from the topping.

Slow-Cooked Country Ribs in Gravy

I liked this cooking method for country style pork ribs. The fat separated from the meat after a few hours and was easy to remove from the pot. The sauce however was a bit vinegary and needed some additional spice.

Paprika Pork Roast

My roast came out a little dry even though I used the convection bake setting on my oven and reduced the heat by 25 degrees. Maybe I sliced the onion too thin, but the slices just cooked to a charred paper consistency and added nothing to the meat's flavor. I wasn't sure I liked this combination of flavors - the ginger and paprika seemed at odds.

Cheesy Fish Fillets with Spinach

There's something about fish and cheese that says high school cafeteria, but I gave it a try with swiss. I used fresh baby spinach in place of the frozen spinach and used rockfish from my freezer. I thought the sauce was especially good, and it was terrific with the spinach. I'm still not sure I loved the sauce with the fish. However, the sauce would be great for masking the taste of a less palatable fish.

Apple Chicken Stew

Adding a cup of broth really tempered the sweetness of this stew, but made it entirely too liquidy. Next time I would use a cup and a half of liquid, using half broth and half cider. Overall, this was better than I had expected.

Easy Cream Cheese Danish

I took this out of the oven after 20 minutes because it looked perfect. But the dough was a little limp - I would have preferred it to be crisper. Part of my problem could have been the store brand crescent rolls. I had a difficult time even unrolling the dough, and it looked dry and old.

Chinese Roasted Chicken

May as well have put nothing on the chicken for as little flavor as the sauce added to the meat. I have better luck basting with just soy sauce and butter.

French Silk Frosting

I tried this a few years back with a yellow cake. The chocolate flavor was so weak, it was a waste of chocolate squares. I recently retried this recipe on a dark chocolate cake - what a difference! I don't normally like chocolate icing on chocolate cake, but this is the perfect chocolate frosting for a dark chocolate cake. My only complaint this time was that the icing left my lips feeling a little slick - I'll definitely cut the butter back to a single stick.

Spruced Up Mashed Potatoes

Made these for Thanksgiving. Everyone wanted to know what was in the potatoes, but I think everyone ate them. No, they aren't as good as mashies loaded with butter and milk, but topped with gray, who needs more fat?

Beef Stew II

The addition of ground cloves made this pleasantly different, however it was more a soup than a stew. I would definitely reduce the beef broth to 3 cups. I cooked this only 4 hrs on high in the crockpot - maybe a longer cooking time would have thickened up the broth a little, but for once the vegetables did not dissintegrate into the broth. I will make this stew again, but I will rotate with other stew recipes.

Monkey Peanut Butter Bars

Very good - nice and buttery. I did cut the chocolate chips in half as suggested by other reviewers; all I had on hand was mini chips. Instead of melting into a spreadable mixture, they cooked into hard little crumbles. I think maybe the oven should have been turned off for the final 8 minutes. I added enough milk to the peanut butter frosting so I could pour it over the cookie layer and tilt the dish until the frosting covered the entire surface.

Bow Ties with Sausage, Tomatoes and Cream

This was pretty bland the first night, even with all that heavy cream. The leftovers were a lot better as the flavors had time to develop. I did only use 1 cup cream, as it seemed to have plenty of liquid without the other 1/2 cup. I also was a little short on pasta, but there seemed to be more than enough with 8 oz.

Mexican Pork Chops

I really enjoyed this, and I felt I was eating pretty healthy (even though it did all come from cans). This would be great on a weeknight as it takes so little effort. I did not read the reviews before making, otherwise I would have added some seasoning to the chops as I was browning them. I definitely will reduce the cooking time by at least 10 min. The chops, though tender, were too dry and so was the veggie rice mix.

Flavorful Flounder

Very, very good. I omitted the green onions as I had none, but did sprinkle with onion powder. My husband added Old Bay to his fish before I popped this in the oven. We both thought this was delicious, even on frozen whiting from the grocery store.

Surpisingly moist despite no added fat (must be that controversial tin foil). The combination of herbs was pleasant enough but could easily be adapted to incorporate your favorites.

Chocolate Chip Orange Zucchini Bread

I don't really care for chocolate with spices, but thought the orange might make a difference. Unfortunately, I used dried orange peel which was totally tasteless. I would not make this again with the semisweet chocolate, but I plan to try this with the white chips suggested by another reviewer, and definitely using fresh orange peel.

Cappuccino-Kissed Cheesecake

This was good, but could have been a little sweeter. While I don't think I'll ever make this particular cheesecake again, I am going to have too find something to else to serve with that espresso cream topping - that was excellent!
