Le Marriage, Alfredo Algerie

After reading all the reviews, I made the following revisions: 3 chicken breast halves, 1/4 c butter, light cream cheese, 1 c fat free half and half and a half cup evaporated milk, and Kraft parmesan cheese. Even with all the modifications, this was still very good. After dousing this with pepper at the table, I realized I couldn't taste the saffron so I would avoid adding additional pepper. I served this over vegetable pasta to mitigate the unhealthyness of the sauce. If I made this again, I would cut back on the cream cheese and possibly add some extra half and half or milk to make this sauce a little thinner.

Quiche Lorraine II

Some quiche recipes require prebaking the pie crust and other recipes don't mention it. I always prebake the crust to prevent sogginess. This was very good, but I did add additional ham as we were having this for dinner. I also ended up with a lot of extra egg batter, so I would recommend using only 3 eggs and 1.5 cups milk. I did find this to be a little too salty (maybe my ham?) so I'd omit it and salt at the table.

Banana Crumb Muffins

Very good. Next time I will use nutmeg in the topping and skip the cinnamon. Walnuts would make a nice addition, but then the kids won't help me eat them.

Fettuccini with Mushroom, Ham and Rose Sauce

I'm sure this would have been fabulous with the heavy cream, but I opted for fat free half and half. My only complaint was that I really couldn't taste the ham in this. If I make this again, I'll definitely use Italian sausage instead.

Rum Cranberry Applesauce Bundt Cake

Rum, cinnamon, craisins, applesauce, caramel - toooo many competing flavors. Cake was moist, but I did not care for the glaze at all. It did not go well with the cake, and it was thin and sugary. I would have preferered a traditional sugar and rum syrup brushed onto the cake.

Middle Eastern Rice with Black Beans and Chickpeas

I thought this was a little bland, despite all the spices. I would cut the beans in half, first so I could taste those spices, and second because this receipe made sooo much, we were eating this for days!

Lime Chicken and Mushroom Pasta

Quick and tasty. I did saute with garlic as so many reviewers had suggested. I also seasoned the chicken with some chipotle pepper seasoning blend that I really wasn't sure what else to do with. I did serve over pasta, but I would skip that if I made this again - the pasta just soaked up the liquid and diluted the flavors.

Pasta Chickpea Salad

I had planned to add cherry tomatoes to this salad but forgot to pick some up when grocery shopping. The tomatoes would have improved the appearance and may have helped moisten this up some. I kept adding olive oil, and finally some more red wine vinegar, but still this salad was very dry. Tastewise it was good, and I always like recipes where I'm able to use herbs from my garden.

Country Rib Delight

I liked this but it was a little too sweet. If I made this again I would try adding dry mustard and maybe some Worcestershire to balance out some of that sugar.

Grilled Halibut with Cilantro Garlic Butter

Very good. I marinated fish for 6-7 hrs in garlic,olive oil cilantro and lime juice, then seared in olive oil, and added a lid to finish cooking. After removing the fish to a plate, I dumped the marinade into the fry pan, cooked for a few minutes with some additional lime juice, then stirred in the butter until melted. Fresh cilantro is a must in this recipe.

Ginger Glazed Mahi Mahi

Great on frozen fish, as it totally obscures the taste of the fish. I think this could be improved by cutting back a little on the balsamic vinegar and increasing the soy sauce.

Always looking for something to do with ground beef that involves multiple veggies. This was really good; the combination of spices was very pleasant without adding tons of heat. I could not find chorizo, so I subbed Italian sausage, but I didn't think the Italian sausage blended in well with the other ingredients. Next time I'll skip the sausage altogether.

White Russian Brownies

I used the full 16 oz of cream cheese, but subbed milk for the vodka. The cream cheese layer was just okay, but the brownie layer really was lacking in flavor. Brushing the top with the kahlua helped a these a lot, but 4 of 5 in my household gave these brownies a thumbs down.

Smothered Pork Chops

My gravy was beautiful in appearance but had little flavor. This could easily be corrected by seasoning the chops with your favorite herbs before browning and doubling up on the onion.

Slow Cooker Ham

Maybe this would have been okay if I'd only cooked this 4 hrs, but after 8 hrs, this looked like beef, tasted slightly burned and was not enjoyable. I'll stick to the oven for baking ham.

Cream Cheese Coffee Cake

My very picky daughter loved this but I thought it had several problems. The baking time was way off - I really don't know how long I ended up cooking it, and it still was a little underdone. The cake was dense and heavy, just a touch shy of gummy. The filling was really tart, and, for a second, I thought I forgot to add the confectioners sugar. The only sweetness to this cake came from the topping.

Slow-Cooked Country Ribs in Gravy

I liked this cooking method for country style pork ribs. The fat separated from the meat after a few hours and was easy to remove from the pot. The sauce however was a bit vinegary and needed some additional spice.

Paprika Pork Roast

My roast came out a little dry even though I used the convection bake setting on my oven and reduced the heat by 25 degrees. Maybe I sliced the onion too thin, but the slices just cooked to a charred paper consistency and added nothing to the meat's flavor. I wasn't sure I liked this combination of flavors - the ginger and paprika seemed at odds.
