Chipotle Sweet Potatoes

I'm always looking for interesting side dishes and this was tasty. I've never used the chipotle peppers in adobo sauce before, and the strong liquid smoke smell did turn me off a little. I used 2 peppers and did not find this to be terribly hot, in fact I thought it could have used 3 peppers. I will definitely make these again.

Sweet Pepper Rice

I was looking for a rice recipe to pair with some shrimp that had been marinating in cajun spices all day. This worked well as it was mild and had lots of visual appeal. I added the peppers after 10 minutes of simmering and they were perfect. I used half oil and half butter to saute the rice, but it really didn't have much butter flavor. Next time I'll try 3 tbl of butter and 1 tlb of oil.

Toffee Caramel Squares

Very good, but could have used more caramel filling. Because you only use half a can of condensed milk, it would make sense to double the filling, but ooooh, the calories! Next time, I'll try with milk chocolate chips.

Pork Fried Rice for Two

This was a little bland and a lot dry. This dish is obviously meant to be healthy and low in fat but it really needed some sauce. We doused it in soy sauce, but that obscured the Chinese 5 spice powder.

Rich N Creamy Potato Casserole

While this was decadently wonderful, I don't think it would be any less wonderful if you cut back on the sour cream by at least a half a cup, reduced the butter by half, and eliminated the salt. And since it does taste like a baked potato swimming in sour cream, why not add some freshly chopped chives? With these modifications, I might not feel so guilty making this more often.

Orange Yogurt Bread

More cake than bread, this was good but not really what I would normally eat for breakfast. It did seem rather dry at first, but it strangely moistened up the following day. The orange flavor was a bit weak, but then I did use dried orange rind rather than fresh.

Coq au Creme

After adding a 16 oz pkg of fresh mushrooms with the garlic and onions, and using 1 1/2 cups of chicken stock, I had way too much liquid. In an effort to thicken the sauce, I used the entire 16 oz of sour cream although I had intended to use only half. While I would definitely recommend the fresh mushrooms, I would use an 8 oz pkg, reduce the broth to maybe 3/4 cup, and add a splash of white wine for additional flavor. I would try cutting back on the sour cream as well to reduce the overall fat content.

Toffee Almond Sandies

These cookies were excellent. Very much like the store bought in texture, but better tasting. I always bake cookies in a convection oven so they're soft and chewey, but I think these cookies would be even better with the added crispness of a regular oven. I did not toast the almonds and the cookies were still delicious.

Sun-Dried Tomato and Blue Cheese Burgers

The steak sauce was overwhelming and the blue cheese crumbles melted out, leaving little blue cheese taste. The cheese problem might be corrected by a fry pan, but I think I'd have to skip the steak sauce.

Maple Salmon

This cooked nicely on the George Forman grill - crispy outside and succulent inside. However there was very little maple flavor and the grill was extremely difficult to clean.

Southwestern Fried Rice

I really enjoyed this and it was quick and easy. I used 2 indivually packaged chicken breast halves, and even though these breasts are on the small side,the dish had plenty of chicken. I used only a cup of frozen corn, but added a can of drained black beans. I did use leftover rice rather than instant, so the dish was a bit gloppy. Not sure why they named this fried rice, but it was very good, especially with a dollop of sour cream.

Cranberry Crumble Coffee Cake

Had I taken this out of the oven 10 minutes earlier, and had I not used fat free sour cream, and had I used the whole can of cranberry sauce, this would have been terrific. Some almond flavoring would make this even more fabulous. I did toast the almonds I put in the bottom of the pan.

Chicken Provolone

This is very similiar to Cathy's Creamy Chicken Bake on this site. Cathy's differs from this in the proportions of ingredients and that it uses Swiss rather than Provolone. I could barely taste the cheese in this dish - maybe a whole slice of cheese would work better -or maybe this just works better with Swiss. Also Cathy's uses only 1 can of soup and 1 cup of stuffing. Yes, there is less sauce, but who needs all that cream of chicken soup? If I were to make this again, I would follow Cathy's Creamy Chicken Bake, substituting the Provolone for the Swiss.

Reese's® Peanut Butter and Milk Chocolate Chip Brownie Bars

Another twist on the ever popular Magic Cookie Bars. Not as good as the orignal, but these will still get eaten. Mine were a bit dry from being overcooked. I did cook the bottom layer at least 5 min longer than called for because it didn't look close to being done. Of course, this goes back into the oven for the second layer so the first layer doesn't need any additional cooking time.

Stuffed Chicken Valentino

This was very good, just a tiny bit heavy on the Italian seasoning. I used 2 large chicken breasts, slicing them in half laterally. The servings were small, but adequate, and the ratio of filling to chicken was perfect.

Twice Baked Sweet Potatoes with Ricotta Cheese

We try to use sweet potatoes as much as possible as their nutritional value far exceeds the traditional potato. While this does take some time to prepare, the taste was worth the effort.
