Curried Chipotle Potato, Spinach and Cheese Wraps

I've never used chipotle salsa prior to trying this recipe. I think I would have preferred regular salsa as the strong flavor of the chipotle salsa totally overwhelmed the flavor of the other ingredients, including the curry.

Zippy Egg Casserole

This was really good, but is really high in fat and calories. I cut back a bit on the cheese and subbed frozen shredded hashbrowns for the croutons. I hope this cut off a few grams of fat! I do think this had just the right amount of heat - enough to add flavor, without overshadowing the cheese, egg and mustard.

Mexican Lasagna

Very mediocre as written but could easily be customized to suit one's taste. The first thing I would add would be fresh cilantro. If cilantro is out of season, the stuff that comes in the tube in the produce section is wonderful. I would also ditch the packaged seasoning mix and copy the spice mix from a favorite Mexican recipe.

Balsamic Glazed Carrots

I usually love anything flavored with balsamic vinegar, but for me this was too vinegary and just okay. I think an added tablespoon of butter might have made the difference. Unfortunatly, I did not read the reviews before hand.

Quick and Easy Pumpkin Mousse

This isn't something I'd make often, but I did enjoy it and it was a change of pace. I was whisking the pumpkin mixture every 5 min or so while it was cooling, but it did develop some small lumps that detracted from the overall texture of the finished dessert.

Prego® Easy Skillet Chicken Parm

Surprisingly good. I didn't miss the breading on the chicken, and I did sop up the browning oil in the frypan with a paper towel before adding the spaghetti sauce.

Pecan Turtle Bars

I used this version as a lot of the reviews on the original recipe complained these bars were very oily. I did not have that problem with tlerro's version. These tasted fine, but I had made them for a pot luck dinner. As the bars were cut, the crust crumbled and the chocolate topping broke off. The recipe does not mention chopping the pecans, but I chopped them anyway. They may have tasted better left whole, but the bars would have been even harder to cut. I probably won't make these again.

Mexican Tinga

I used a package of 3 boneless chicken breasts, poached and shredded it, and was shocked to find the cooked meat weighed only 10 oz. Needless to say, my tinga was extremely spicy as I used most of the 7 oz can of peppers. Half the can for 3 chicken breasts is probably too much. Despite that, my husband enjoyed this and he's really not a big fan of Mexican cuisine. Instead of buying ready made tostada shells, I baked corn tortillas on a cookie sheet until crisp, and with the addition of shredded cheddar, sour crean and spinach leaves, this was a tasty meal.

Cardamom Granola Bars

Who knew you could make your own granola bars?? I was afraid I'd let the butter/sugar/honey boil a bit too long, but they came out perfectly. I did use the tin foil (saturated with cooking spray). The bars sliced up nicely with minimal crumbling. I love the peppery taste of cardamom, but this was a bit much and needs to be cut back to 1 tsp. I can't wait to try this again as there is so much you can change up - the fruit, the nuts, the spice, adding chocolate morsels etc. I love recipes like this that inspire my creativity!

Cathy's Creamy Chicken Bake

I've been making this dish for several years and was surprised to see I'd never reviewed it as it is one of may favorite "go to" recipes. This is easy as the chicken requires no browning prior to baking. I usually avoid recipes that include canned cream soups, but I'll make an exceptio for this one. Between the stuffing mix and wine, the canned soup taste really disappears. I would not hesitate to serve this to company.

Savory Blue Cranberry Shortbread with Caramelized Onion Cranberry Jam

Fabulous and different. Loved them with or without the jam. The recipe was a little intimidating but actually turned out to be pretty easy, though not quick. I would never have thought to use these as appetizers. I served them with a dinner of scrambled eggs and turkey sausage.

Curried Rice Pilaf

Excellent flavor. I tried lightening this up a bit by using only 1 tbl olive oil and a tsp of butter. It was so dry, I added another tbl of butter and it was still dry. I will definitely make again, but with the full quotient of fat, probably half healthy oil and half butter.

Minted Salmon

This made the most succulent salmon I've had in a while. I used wild caught sockeye and marinated for about 3 hours before cooking on the grill. I was concerned that the mint might be overwhelming, but it just tasted herbal. This took quite a bit longer to grill than the recipe indicated, and I did not pull it off until it was looking a little overcooked (it was wonderfully moist and delicious). I did skip the brushing with butter - that would have added uneeded extra calories.

Smothered Tilapia

I subbed reduced fat provolone for the swiss cheese and was surprised at how good the fish was with the cheese. I could not taste the steak seasoning at all, so I guess I was a bit too light handed. My fish was a little rubbery so I would be very cautious with the cooking time.
