The Talk of the Potluck Kale and Apple Salad

This was way to salty! I would eliminate the salt and salt at the table if necessary. For my taste, I would prefer nuts to the sunflower seeds. I love craisins and gorgonzola but I still thought this needed some additional seasoning, maybe rosemary?

Spiced Quinoa

This was very good, however I would have preferred a smaller, softer bean. The chickpea was so much different in texture than the quinoa, it detracted from rather than enhancing the dish

Mouth-Watering Stuffed Mushrooms

Candied Kielbasa

I'm not a fan of kielbasa, however this was pretty good. The horseradish saved this from being cloyingly sweet. I think you could easily make this in a saucepan on the stove.

Marrakesh Vegetable Curry

Lots of chopping but a very flavorful and colorful vegetable dish. My husband would have preferred if I had peeled the eggplant, but I did not find the skin offensive in the least. We ate this without rice or couscous

Blueberry Lemon Loaf

As an empty nester, I no longer do much baking. My husband is not big on sweets, and that leaves only me to eat what I cook. This was perfect, less to eat, and between the blueberries and the loaf not being overly sweet, I am getting some help. I did sub fat free yogurt for the sour cream to reduce the fat content. I used the topping as a frosting, only because I didn't read the directions far enough to realize I was supposed to use the frosting as soon as the loaf came out of the oven. This probably could have used a little more lemon flavor, I had only one small lemon on hand. Even so, it rates 5 stars with me.

Fluffy Peanut Butter Frosting

I did not allow the butter to soften (the KitchenAide can handle that chore), and still this frosting was the opposite of stiff with a beautiful creamy texture. I just didn't think it had enough peanut butter flavor. Less butter and more peanut butter may solve that issue, but I also thought the frosting needed a dash of vanilla.

Curried Cashew, Pear, and Grape Salad

Jerk-Spiced Beef Sirloin

Good flavor but could have used a little more heat. I cut this in half because it made a lot of marinade. If I were to make this again, I would reduce the oil to 2 tablespoons.

Quinoa Salad with Mint, Almonds and Cranberries

This was very different and unusual. Both my husband and I enjoyed it but we weren't sure if it was a salad or main dish, or if it should be eaten hot or cold. We ate this for dinner one night and used the remainder as a side dish the following night. I thought it tasted the best when eaten at room temperature. Don't skip the lemon zest, the zest seemed to unify all the other ingredients,

Barley Lime Fiesta Salad

This recipe makes a ton, so either take this to a picnic or be prepared to eat this all week. Actually, this does make a nice, hearty, filling lunch. I think the amount of barley could be cut in half, allowing the veggies to take center stage. The seasoning was pretty subtle when diluted with all that barley. I did sub honey for corn syrup as suggested by other reviewers.

Chocolate Marquise

This was very rich and decadent, so I will not be making this often. The flavor was excellent and I did not think the coffee flavor was too much, even though I used espresso powder! I did have some problems with the directions. I could not get the butter and cocoa powder to combine, and wondered if the directions should have read to combine the butter with the sugar. Despite the wonderful taste, the finished product had small lumps of butter that I could not beat in, and the sugar never dissolved, leaving a grainy texture to the dessert.

Cajun Chicken Pasta

I'm sure this would have been fabulous if I hadn't substituted half the heavy cream with nonfat yogurt. The sauce was a little thin, and consequently didn't stick to the pasta the way I would have liked. I do not keep lemon pepper in my pantry as it seems to go rancid more quickly than I can use it, so I added some freshly ground coriander seeds which did give the dish additional dimension.
