Tangy Honey Glazed Ham

Ginger Steak

This was quick and easy but I was not overly impressed with the flavor. I may give this another try with fresh ginger, as I used the roasted ginger I had on hand.

Cajun Chicken Pasta

I'm sure this would have been fabulous if I hadn't substituted half the heavy cream with nonfat yogurt. The sauce was a little thin, and consequently didn't stick to the pasta the way I would have liked. I do not keep lemon pepper in my pantry as it seems to go rancid more quickly than I can use it, so I added some freshly ground coriander seeds which did give the dish additional dimension.

Wine Sauce Chicken

Very good, I did browse the reviews and sauteed onions along with the mushrooms and added Herbs de Provence to the sauce. To reduce the fat content, I replaced the mayo with nonfat yogurt and used the light version of cream of mushroom soup. This is very similiar to Chicken Tetrazini, but without the pasta.

Curry Kale and Potato Galette

This was a pain in the neck to make but was absolutely delicious. My husband complained I made a healthy food unhealthy with the addition of potatoes and cheese, but he seeemed to have no better luck than me at leaving the table! I would reccomend using a large non stick Dutch oven. I used a stainless saute pan and had to keep waiting for the kale to decrease in volume before I could add more. I was afraid all the spices were stuck to the bottom of the pan and there would be no spices left for the kale, but this was loaded with flavor and truely unique.

Parmesan Sage Pork Chops

These pork chops were excellent. The lemon zest and sage really made these special. I did use freshly grated parmesan rather than the canned cheese. My chops could have used a couple of hits with the meat mallet as they were a touch tough. The bread crumb mixture could be cut in half. I did pile on some of the leftover crumb mixture atop the chops before I put them in the oven as the freshly grated parmesan wasn't sticking to the chops. Sooo good with the toasted cheese!

Sweet and Spicy Stir Fry with Chicken and Broccoli

I added celery and carrots based on some of the reviews, which did add to the prep time, but this was still a do-able weeknight recipe. Easy and tasty.

Wine and Dijon Marinated Pork Loin

This was very good, but extremely salty. I halved the ingredients and used a pork tenderloin, baking it for a little less than an hour. There was quite a lot of liquid left in the baking pan which would probably have make a delicious gravy for mashed potatoes.

Chewy Peanut Butter Brownies

I baked these in an 8x8 glass pan for 35 min, and they were just slightly underbaked, the way the best brownies are. However, these were a little short on flavor. They need either icing or some added nuts or chips.

Quinoa and Black Bean Chili

This is such a hearty chili, you won't miss the meat. I top it with a dollop of fat free sour cream and serve with a salad. This recipe does make a lot, but you'll have lunch for the remainder of the week.

White Chocolate Pumpkin Cookies

These were really scumptious even after subbing 3/4 cup whole wheat flour for white. As good as these were,1 cup of white chips would have been plenty as these were pretty sweet. I did use butter, but couldn't taste it at all, so a lower cholesterol fat alternative would work better for me.

Crescent Layer Bars

I would have thought the nuts would balance out some of the sugar but that was not the case. The crescent roll layer didn't work with the filling at all. I won't be making this again.
