Triple Bypasses

GREAT! I've cooked these for friends and family. When people see what I'm preparing, they generally give me an odd look, but love them when they are served. But, hey...whay stop at a triple bypass? I sprinkle lightly crushed pork rinds on top for the full coronary!

Chicken and Rice Casserole I

Rice didn't cook well, even with extra time. Soupy, runny, bland if not virtually flavorless. I would have vomited but that would have been redundant. Will never make again.

Blackened Chicken

Why all the fuss over this recipe? I made it to a "T", which I almost never do with any recipe. Wasn't hot enough to call "Cajun". Wasn't flavorful at all. Basically, a chicken died for no reason at all.

Nutty Wild Rice Salad with Kiwifruit and Red Grapes

Pretty good as I made it. Used 1/2 cup Jasmine rice and 1/4 cup wild rice. Omitted the Kiwi as the ones at the store we terrible and I didn't use ANY chicken stock as I was cooking chicken with it. Doubled the dressing. Was very good. I used some of the rest the next day in a wrap sandwich of turkey, lettuce, and cheese. That was even better!

I've not used this recipe. However I've had this many times since childhood. In my family we've always used a combination of ground sausage, celery, red peppers, and allspice.

Coq au Creme

I would have rated this higher, but looking over this recipe as it's presented I could tell it was a good idea needing quite a bit of work. Cut back on the broth and sour cream by 1/2 or you'll have soup. I used fresh baby bellas in place of the canned mushrooms. I also cut the chicken up smaller to cut down on cooking time. There really is no need to use 2 pans for this recipe unless you enjoy extra cleanup. It can all be done in one large pan. Served over whole wheat noodles and was decent.

Zucchini Parmigiana

I only loosely follow recipes, as I did with this one, and it came out great. I didn't bother with the eggs or breading procedure at all. I used considerably more garlic and basil from the garden. I used only 2 cups of sauce and only 1 cup of ricotta as the recipe seems to call for far too much in my opinion. Though I'm not a huge fan of Italian food, this was probably one of the best dishes I have made.

Garlic Chicken And Grapes

I'm sorry. Everyone seems to like this recipe but I hated it. I thought the sauce was terrible. I think it was the vinegar I didn't like. My family liked it though. I served it with white rice and peas. I liked the first few bites then I had to really choke the rest down. After I realized I didn't like the sauce, I tried to add a few more spices (garlic salt, onion powder, oregano, a little of the chicken broth) and a little flour to thicken it up a bit. It was OK at best to me, but as I said, the rest of the family liked it. None of us cared for the cooked grapes, however. Not the worst I've ever had, but I think if I ever make this again I will omit the vinegar.

Italian Chicken with Garlic and Lemon

Pretty good, but I will not opt for frying the potatoes in the future. As one other reviewer stated, the lemon/vinegar in the potatoes wasn't the most pleasant. I'll either make the potatoes separate or serve with rice.

Chicken and Sliders

This was very good, but I only loosely followed it...I used 2 chicken breasts and 2 thighs with loads of fresh basil from the garden, a touch of red pepper, and loads of sauteed garlic. I didn't have celery on hand so I used carrots, green pepper and broccoli from the garden. For the noodles I went 50/50 white/wheat flour.
