Apple Cole Slaw

Fantastic! I'm not a big slaw fan, but had purchased the "cutest" little head of cabbage and needed to use it. I chose this recipe simply because the ingredients matched my fridge findings. Oh yum! With the crisp, sweet apples in the cole slaw, I am a convert.

Antipasto Salad

I've made this 3 times this weekend, twice for pot lucks and once for our family. What a great recipe! The pasta soaks up the dressing, giving it a perfect bit of zip. I did also reduce the oil to 1/3 cup, which was plenty. More veggies than the original amounts can be incorporated here, if that is your pleasure. The mozz cheese was too much for my tastes, so I just stuck with the parm at the beginning. Enjoy!

Kalua Pig in a Slow Cooker

As were many others, I was worried about the lack of typical slow cooker ingredients in this recipe. But, after 12 hours of cooking, followed by pulling apart the meat that was falling off the bone, and reheating in the juices, I declare it a hit! Do understand that this is not a "saucy" recipe as you may expect from something BBQ related, but it is sure some finger-licking pig!

Three Bean Salad

We love to keep this salad in the fridge for munching. I get the green and wax beans locally, clean them up, trim the ends, cut into 2 inch pieces, then blanch for 3 minutes in boiling water. While I do love the sweetness, I also cut the sugar down, just to hamper my "sweet veggie" guilt. This is a perfect recipe to keep around and pull out at a moment's notice.

Banana Muffins II

When I had some ripe bananas and a bit of time in the morning, I went looking for a nice, simple little muffin recipe. This was perfect! After making the muffins, and eating a few, I went out to run some errands. Upon my return, they were all gone, courtesy of my teen age son. I'll call these a hit!

Fresh Cherry Crisp

This was my first time baking with cherries, but I'll certainly try it again. Wish I had read through the comments and reduced the amount of sugar, but will do that next time. The bin of cherries from the farm stand was more than 4 cups, so I just tossed them all in. This is a CHERRY crisp after all. I wondered about the shortening in the topping, but went with the flow. Sometimes we get a bite of that shortening in the topping and it is just icky. Will keep this recipe on file but skip the shortening.

Slow Cooker Chile Verde

I have set aside my long cooking, fairly complicated chile verde recipe for this wonderful rendition. After reading others' comments, and needing to double the recipe, I opted for half Hernandez salsa and half store brand salsa verde. Please, please don't tell anyone how easy this is!

Annie's Turkey Salad

This is a fantastic turkey salad recipe because it lets the turkey shine without being covered up with competing ingredients. Not having mustard / mayo mixture, I just used about 2TBS Dijon mustard and added 1/4 cup light sour cream. A bit of celery added a nice crunch. Luckily, I had some cranberry bread from Christmas, and used that. Wow! As another reviewer stated, this is a great base recipe that can easily handle a few extra add ins to suit your tastes.

Marinara Sauce
